Making and Using Amaranth Flour: Amaranth Tortillas and Dosas with Roselle Syrup

- Last year, I did an overview of growing growing, harvesting, processing, and cooking with amaranth. This is a follow up, that includes a recap of and update on harvesting, as well as how to grind the amaranth seeds into flour, and a few recipes that use it. I muddle through making amaranth tortillas, and put them to the taco test. Then ferment some amaranth batter to make dosas, topped with a syrup, made from our homegrown roselles.
Note: For the dosas, I used equal parts (1.2g) amaranth flour, chickpea flour, and brown rice flour. - Навчання та стиль

Amaranth seeds sink in water and the flower/other things float so I just pour the mix into a bucket of water to get rid of the last little stems and flowers then pour it out on a sheet to dry in the sun for a day or 2
Excellent idea! I'm totally trying that, next season. Picking all the volunteer amaranth seedlings from the yard -- sown from my winnowing -- gets pretty tiresome. 😆

Amaranth flour seems very expensive to buy. I planting a 3' x 20' area next season. And a 3'x20' of chick peas. Should give me most if not all the flour I need for the year. Thank you for this thoughtful video! You are one of the beautiful people.

If amaranth grows in my area (zone 10A), it should yield plenty. Here amaranth. literally grows like a weed and is very hardy….growing in almost any crack in the pavement with minimal water needs.

Great ideas. I am growing different types of Amaranth currently. Most is Red Garnet, and some elephant head. Very prolific and I'll get lots of seeds. Have you tried it with these varieties?

Which flour caused the bubbles/fermentation in the 6-10 hrs?
Since they were all combined, I couldn't say. If I had to guess, I'd say the amaranth would be the best host for microbial activity, since it was fairly fresh from the garden, and unwashed.
Thank you for these ideas for using amaranth to make delicious dishes 😊. I think there is an error/typo in the description box in the line about dosa recipe. It can't be 1.2 g.
It has been so long ago that I made this, I couldn't tell you where I got that number. I assume I weighed it? It does seem like a very small amount. 🤔

How many mL is your half cup? It looks a lot bigger than my 1/2 cup!
🤷 the usual amount I think? Though there is some variation in measuring cup sizes, despite what they're marked, I've noticed.
@@ShoestringMartha Your measuring cup should have mL markings on the inside or on the bottom, if so I would really curious to know. Not so much in your recipe, but in some baking recipes this inconsistency can mess up a home cooks attempt 😣
How much amaranth did you plant?
I could not say. I put down a little sprinkle and a forest came up!
But I thought Amaranth has a lot of protein already. (?)
per cup, wheat flour has 13g protein and amaranth has 9.3g - so not bad!

people focus on nutritional content on food, but the most important thing is how well digested is that nutrition...amaranth(if popped) is way superior in nutrition than any other grain...also the need for protein is a myth and excess of protein can lead to illness
