    Ingredients:
    3 rice papers
    A bunch of chopped scallions
    3 eggs
    1 sliced sausage
3 slices of thinly sliced spam
3 wedges of Laughing cow cream cheese ( or any other brand)
3 tbsp dried baby shrimp (optional)
    3 tbsp crispy fried shallots
Recipe: • Crispy Fried Shallot a...
    Condiments:
    Sriracha or chili sauce
    Mayonnaise
    Directions:
Prepare all ingredients needed prior to cooking. Turn the stove to low heat.
Place a sheet of rice paper on a non-stick pan with a handful of scallions. Carefully crack an egg in the middle. Use a spoon to evenly spread the egg and scallions. Once the egg start to set add sliced sausage, spam and crumble cream cheese on top. Press down on the cheese to roughly spread it. For added crunch and flavors, sprinkle dried baby shrimp and crispy shallot (see link for recipe above). Drizzle sriracha/chili sauce and mayonnaise to finish.
Continue to fry for another minute until everything sizzles up. Fold it in half then flip to fry until both sides are crispy. Enjoy ~!
    ***Tbsp: tablespoon
*** You can omit the cream cheese for lighter taste.
*** Dried baby shrimp is also optional but crispy shallot is a must add ;)
*** The exact measurements are not important in this recipe, adjust amount according to your preference. Just keep in mind that too much sausage and spam will make it too salty and too much sauce can make it soggy.

I'm guessing if my rice paper keeps folding up and distorting, that means my heat is too high?

Hi, start with low heat and quickly spread the egg evenly to stop the rice paper from curling. You should get a nice, flat base :)
