Sanji's backstory hits so hard. I’m glad that for the zeff-eating-his-own-leg scene, they’re staying true with the manga version. Good lord, that was brutal. The kid actors really did a great job portraying the emotions in the backstories for such a young age.

One point you seem to be misunderstanding a little is that it's not that Luffy didn't learn to swim, but it's the Devil Fruits which cause that - the sea functionally paralyzes someone who's eaten one, proportionally to how submerged they are.
Yup. "Mother Ocean turns her back on you, and the sea can take away your strength" Doesn't matter if you know how to swim or not; it doesn't help regardless.
"Luffy is too sympathetic to be a leader"….. As much as he is an idiot and a "high maintenance captain" according to Zoro but surprising I would say he’s the best captain in the series. Also there is 1000+ eps in the show, where they do show you how he grows as a captain 🤣 I don’t know how the LA could do that with this little eps in a season. I hope they do show his growth without it feeling forced.
Fun Fact: Arlong did have a ship, the Shark Superb (The sails were even arranged to look like the Sydney Opera House), but it was dismantled to be used as parts to build his land base - Arlong Park.
Nami saved Luffy rather that betray him n this episode, when she first saw Arlong she hid from him and begged Luffy to run away. He didn’t, so she did the only thing she could to make Arlong leaves the Baratie and that Luffy will survive without Arlong turning on her.
Even if you assume Nami wants to leave to do her own thing it wouldn't automatically follow that she'd be ok seeing Luffy and crew dead. She likes them, even though she has her own stuff going on.
Luffy can touch water, it’s not lethal like kryptonite, rather it renders your body immobile and makes you sink like a stone if you’re submerged in it.
Men gotta do the men thing. They can’t talk emotions without being angry cause our society makes it that way. Thankfully that is slowly getting better. Boys are allowed to feel. It’s a good thing. Sanji and Zeff are basically a Dad and son doing the man thing.

Nami's betrayal is heavily foreshadowed in the live action, but in the original material, it is far more subtle. They change a lot of details, much of which involves Garp since he's not supposed to be in this part of the story. Most of your confusions and issues somewhat stem from that: they tried to pack 50 chapters worth of storytelling into eight episodes for a completely different medium, and that comes with its fair share of liberties! Get used to the teary-eyes, btw. One Piece tends to do that to people!

Luffy is still a rubber-man underwater, he just lacks the strength or energy to do basically anything once he touches the sea. Fun fact from the source material; Luffy was a strong swimmer before eating his Devil Fruit.
The way the devil fruit + water thing works: devil fruit eaters always sink in water and being submerged in water drains their strength. If the water is roughly above the waist they get so weak they just can't move so it's impossible for them to swim.

Also of note, Buggy had been the best swimmer in his first crew before Shanks caused him to accidentally consume the chop chop fruit.
