I cook a lot of secreto here in Barcelona. That cut looks quite thick for secreto Harry. The secreto is a part between the lomo and front leg. The cut from the shoulder is called Presa Iberico and is thicker than secreto. Either way, both beautiful cuts of pork.
Next time you're able to visit, might be worth a trip down the road. There's a group here in TX who flew in a bunch of these hogs and raise them with the local acorns. They have told me in the past they fly in the butchers once a year for slaughter and cutting as well. I can shoot you the link if you want to take a look.

50 $ for delivery, wow that is crazy. Just drive down to Miami and you will find several Spanish stores that sell the iberico pork, including the "pata negra, bellota iberico ham" no delivery fee 😀. But as always, great video. I will be trying that butter basting technique on my next pork grilling

I have eaten the famous jamon iberico in Spain a few times but never any other part of that type pork. I wonder if someone who has had both can tell us if the nutty flavors of the jamon iberico carries thru as much with other cuts. Also, mangaliTSA...like tsatsiki. 😉🍻

We also make the most amazing Iberian Ham with this type of pork and if you ever have the chance to try it, specially the Spanish Bellota variety I swear you will love it. It's incredibly expensive though.

With such exquisite and expensive meat, you want it to reach its full potential as your personal taste. Do not listen to others, especially me, as I'm very biased as I cook to win prize money to influence 24 strangers at a contest (aka judges) to give me $10,000 prize money!

This pork is indeed next level....but with all that flavour and marbling, did it really need to be basted with butter?

I did it at 275F smoke and 600F sear
