  • Just as Julia Child revolutionized French food, so did Cecilia Chiang with Chinese cuisine. After moving to the United States in 1959, Cecilia launched the Mandarin in San Francisco. The restaurant introduced foods like Peking duck, pot stickers and hot and sour soup to an American audience, and began to attract celebrities and foodies from across the country. Her cooking has set a standard for Chinese food in America, and has influenced everyone from Alice Waters to James Beard.

      I agree so much. Some of my friends tell me that they hate Chinese food. I'm like, okay, what have you eaten?
      All they list is the crap that is Americanized Chinese food. They haven't tasted the actual delicious Chinese food that hasn't been altered. It doesn't need to be changed for "American" tastes -- if it tastes good to you, it tastes good to most everyone.

    I like that she doesn't fully take credit and acknowledges that she didn't make it BUT she did introduce it to the Americans. Very humble.

    Cecilia Chiang is so cool. Of course in an interesting turn of events, her son Philip goes on to create P.F. Chang's which serves non-traditional Americanized Chinese fusion cuisine to millions of people around the world. 😀👍

      Tosh T: I think a lot of second or first generation Asian Americans want to elevate their food to something that is better than just cheap takeout, something that has some dignity. Asian haute cuisine is one way to do that.

    Sometimes I wish the American culture was more open towards the stranger side of cultural food. Take for example chicken feet, I love it, especially from Chinese restaurants, but for many people it is strange and absurd. I think there should be more curiosity and interest to try these cultural dishes that are delicacies

    I truly thank this woman bc the Americanized ‘Chinese ‘ food when I was young was boring.
    Later in my thirties, I studied with a physician from China (while I was in residency). She was blessed to be able to live with her parents here in the US. Her parents knew how to cook both dishes from North China and South China. I know true Chinese cooking. I have been taught by the best.
    Across the US by the timeI was 40, the Chinese cuisine had changed from this boring mimic of Chinese food to the more authentic that the lady you featured had introduced to the US. I much prefer her style. And I cook in the tradition of both North and South China thanks to my Chinese colleague’s parents.

    1:26 as a Hong Konger i recognize all of these 4 dishes. Pot sticker (basically long fried dumplings) is my favorite, especially when paired with black vinegar.

      Be aware that roast duck and Peking duck are different. And most duck you see through the window at a Chinese place, it’s roast duck.

    This is a nice tribute. I wish however that the video also alluded to the fact that Chinese food, like all other foods around the world, is diverse. While we can all think of some iconic dishes from each country, the fact remains that there is such a wide range of cultures and races within each country which manifests itself in a variety of dishes. From my personal experience living in the States, most Americans are familiar with dishes from the Sichuan (川菜)and Canton provinces (粤菜), but not the other main cuisine types in China. I wish we will all have an opportunity to try a wider variety of dishes soon :)

    My Kung Kung came here to America in 1955, he was born in Macau but his family came from different parts of China. Catonese food is different than food in the North of China, and Macau has heavy Portuguese influence in thier cuisine. China is a wonderful country with a huge and wonderful cuisine.

    Soooo.... How on Earth did we, as a nation, go from this wonderful cuisine to the horrid version of Chinese food that is so prevalent now?? Sickly sweet, heavily breaded, and it all tastes the same. The average American Chinese restaurant is an insult to Chinese cuisine, imho.

      American Chinese food is American Chinese food. Instead of feeling insulted, don’t associate it with authentic Chinese food. It was created by Americans of Chinese descent, the same way burritos were created by Americans of Mexican descent.

      But she cannot represent every province in China. Each province has its' own cuisine. She is from Shanghai. But it is up to authentic Shanghainese people to judge if her food is Shanghainese enough.

    She came to America for the first time in 1959, that's when China took over Tibet but we Tibetan are still breading on this beautiful earth. Free Tibet now. We are human being and we have to wish for all human being to have a meaning life and have a right to do what they want. We don't need communist, corruption and weapons, we only need love in this world! Please hit like if you wish Tibet will be free soon.
