  • Note from Chef Gavin: The French dip is an American sandwich created in Los Angeles in the early 1900’s. It is named for the fact that it is served on a French roll or French bread. It is a sliced beef sandwich served with a side of the cooking “jus” from the beef drippings. It was said to have been created when the cook was making the sandwich for a patron and dropped the whole sandwich in the cooking juices and the patron liked it and ordered it again “dipped.”

To start, grab a well-marbled Certified Angus Beef ® top sirloin roast, and then follow this step-by-step recipe for the most delicious sandwich to ever hit your taste buds.     INGREDIENTS:
    2 pounds Certified Angus Beef ® top sirloin roast
    1 Certified Angus Beef ® shank (about 1 pound)
    3 teaspoons coarse kosher salt, divided
    1 teaspoon fresh cracked pepper
    1 tablespoon neutral oil (like grapeseed or canola)
    1 large yellow onion, root removed and cut in half
    1 quart salt free beef broth
    6 slices Swiss or provolone cheese (optional)
    1/4 cup hot mustard
    1 (24-inch) French loaf or four 6-inch French rolls

    A good French dip sandwich is a thing of beauty. A couple of observations, if I may: 1.) Many a French dip has been ruined by a way-too-salty au jus. Thanks for stressing use of a low-sodium beef stock; 2.) God knows I love cheese but not on my French dip. And who the hell has ever put mustard on a French dip? What alternate universe are you in? 3.) I disagree with your use of a flimsy loaf of bread. The right (hearty) bread will ensure the French dip’s success. You want bread which won’t disintegrate mid meal. The bread must be substantial enough for multiple plunges into that mighty tasty au jus you created. Finally, to all the witless commentators who bemoan this sandwich isn’t “French.” Well, duh. Here in the good ol’ USA, we have have “French Poodles” and “French dressing” and “French kissing” and we know they aren’t really French, you idiots. Well, the kissing part perhaps…

      Yeah I thought the mustard was a little weird. I am not too familiar with the sandwich but I just got some roast beef and I am going to make mine with a horseradish sauce.

    I sometimes have to control myself from ordering French Dips more than once a week. I don’t always have them every week but when I’m in the mood for them they’re a weakness.

    I made it but cooked green peppers, onions and mushrooms in my dip with good spices, then strained it and fried the veggies more for texture and turned my dip into a cheese steak with cheese on it when I did the pan thing at the end. People don’t need to pick apart your recipe I think spicy mustard makes it next level and I have been to restaurants that do the same. Thanks for the guildlines either way you dice it if you don’t screw up it always turns out good.

    Lol, all these Frenchies didn't read the dude's description. He's making an American beef sandwich, which we call the French Dip. Cause it's usually served on French bread. It's about as French as French Fries. Calm down.

    Would smoking the roast compliment it any? I know it would free up a bit of stove space, but I just may make this for the weekend and I do have a Masterbuilt smoker I can use.

    Instead of a spicey mustard I found that I love a good quality honey mustard with a mild horseradish. It adds the same bite but with a little bit more depth. in my opinion, at least.

    Actually a true French dip sandwich is a little bit different. We used to serve them in our restaurant. First you’ll roast a whole beef tenderloin to use as your beef. Otherwise known as the fillet mignon. You will roast it in an oven slowly. You will also make your own French bread and bake your own bread. And you will take the little bit of pan drippings from your beef tenderloin to make up your ah jus. And of course you will never put your beef back into the gravy so it over cooked it as shown on this recipe above. You will slice your beef after letting it rest 15 minutes right out of the oven so it will still be nice and hot and then serve it on the fresh baked French bread with a side of au jus😊 and that is a real French dip sandwich.

    Melissa Clark seasons a top loin with salt, pepper, garlic and rosemary before roasting to create the beginning of the perfect cold sandwich. Lettuce, tomato, Sauce: mayonnaise, dijon mustard, Worcestershire. Beef seared then cook 225 F for 45 minutes.
    French Dip Sliders
    Roast Beef with onion soup mix
    In casserole dish
    Brioche slider rolls
    Roast Beef in stock for tenderness.
    Oil, Onions, salt, Montreal Steak seasoning
    Munster Cheese
    Gouda Cheese
    Poor sauce over slider, then broil.
    Sauce: Butter, Garlic minced, Oregano
    Wall Street Prime Rib Sandwich served with Beef Barley Soup, Black Forest Beef Stew, or Chili. Beef Stock: Onions, beef covered with tomatoes paste, water to cover beef. Baguette with Swiss cheese melted with onions, and a dipping container of beef broth.
    Melted Cheeses:
    NY Sharp Cheddar
    Wisconsin Soft Bleu
    Havarti Dill
    French Brie
    Smoked Gouda
    Liederkranz
    Prime Rib sauce
    Cook bacon roux with cornstarch, garlic, onion confit for thickening. Add 3/4 cup Prime Rib Au Jus and tomatoes paste. Add Tbsn: Red wine, Molasses, Oil, Soy sauce.
    Yorkshire Eggs Benedict:
    Chives
    Prime Rib with Horseradish sauce (ginger)
    Poached Eggs with Hollandaise sauce
    Hollandaise sauce:
    Water to steam in double boiler
    1 stick butter
    6 egg yolks
    Garnish with ¼ tsp Salt & cayenne pepper
    Beef Mushroom Barley Soup
    Cook oil, onion, garlic, thyme, salt, pepper, mushrooms, beef. Add beef broth and pearl barley.
    Black forest stew:
    onions
    celery
    Mushrooms
    800 g of beef coated with 4 tablespoons of flour, salt and black pepper
    olive oil
    1 sprig of thyme
    1 sprig of parsley
    1 sprig of rosemary
    1 tablespoon of tomato paste
    20 g of butter
    2 Tbsp of Red wine
    1 L of water
    Cutt vegetables into cubes. Simmer oil and herbs. Add tomatoes, butter, wine and simmer. Add cutt vegetables and mix. Place beef in with water. Simmer on low- medium for 45 minutes to 1 hour in pot with covered lid.

    It looks delish the only thing is I don't like my bread untasted it's too squishy to Brady it has to be toasted to give it a nice little crunch as it goes into the odd juice and you bite into it absolutely wonderful but it has to be toasted

    Personally I wouldn’t cover the beef while the cheese melts in the hot pan. You basically just ruined the beautiful medium rare roast!

    U get flavor from onion by roasting it not buy putting it in oil. Dry pan to roast that's wher ur flavor is. Frying a onion does not make it better

    This is a backwards way of making a french dip.....kinda insane you are recommending using a steak to boil in beef stock....why not just use the dripping from the roast?

    I'm so sorry to be " that guy " but that sandwich got nothing french in it.
    The " beef " showcased here isn't even real meat... it's weird american beef, disgusting. If you want fat in a french sandwich, use lard.
    Then the " cheese " isn't even real cheese either, it's probably some weird mass produced cheese ... looks really disgusting ngl.
    And then, the peak " baguette are too crusty " i mean ofc, bread is mean to b crusty, if it's not, then it's not bread, as the weird ass looking stuff displayed in this video.
    Can someone enlighten us poor souls as to why this stuff is called french sandwich, it's a subpar subway inedible.
    Great channel otherwise but please show some respect, we can understand for the beef, not for the cheese and never for the bread.
