So, your steel gave your new joist height, how did you put those new joists in?....are they notched into the web? Or do i see joist hangers? Basically how do you level the floor the whole way through? Subbed :)

It depends on jobs but this one is designed with joist hangers each end. So you fix them at the right heights each end and follow across

Looks like there is no ridge beam. How do you control rafter thrust forces at eaves?

No ridge beam need on most Velux conversions. As long as you have a support collar to stop spreading. Then low level wall.
Every loft or structural work is fully calcs before we touch anything. But thankfully work with a great engineer. 👌🏻
