Edamame, Italian Style, healthy - vegetarian and vegan

  • A vegetable/legume that is often overlooked is the Edamame and today we are going to cook them Italian style. Very healthy and delicious, the edamame are very easy to cook and are readily available in your local store's freezer section, which makes them very convenient too! I hope you give them a try as they are nutritious and delicious :)

    Edamame - Italian style
    Ingredients
    • 454 grams (I lb.) Edamame (shelled)
    • 6 TBSP extra Virgin Olive Oil (EVOO)
    • 1 clove of garlic, minced.
    • 1 small onion (about ½ cup) (or medium onion if preferred) sliced thin, then diced
    • Salt to taste
    Process
    • Put EVOO in a pan and add the garlic. Sauté for 30 seconds on medium heat.
    • Add the onions and continue to sauté on medium heat for 3 more minutes, until onions are soft.
    • Add the Edamame and toss to combine - get them all coated with your EVOO, garlic and onion.
    • Sauté on medium heat for at least 5 minutes.
    • Add salt to taste and enjoy 😊

    It is one of the best beans for protein. They are absolutely delicious, leftovers are also good cold in a salad.

    I subscribed because of this video. I have to eat more healthy and learned that Edamame are low in carbohydrates, which can make eating them less likely to raise blood sugar levels. They're also a good source of protein, fat and fiber, and measure very low on the glycaemic index, which is a measure of how quickly some foods raise blood sugar levels. Onions and Garlic are foods with the lowest lectin content options as are asparagus, celery and mushrooms. Of course Extra virgin olive oil is also healthy and is a great source of antioxidants, which are compounds that help fight inflammation and chronic disease. The oil's main antioxidants include the anti-inflammatory oleocanthal, as well as oleuropein, a substance that protects LDL (bad) cholesterol from oxidation. I recently added eating Edamame as one of my favorite vegetables and prepare them, as a Dutch Indonesian, using the recipe for my Sajoer (Sajur) Beans. For the spices used you google boemboe or bumbu sajoer beans or buy the boemboe ready made in your Asian supermarket. This Italian style recipe will be a nice variation.

    Ivo, this is a gluten free bread question -- when do you add herbs to the bread making process? At what stage? I'm new to bread baking because of gluten issues so am excited about this flour.
