The Prophet Muhammad (ﷺ) is reported to have had very few white hairs in his beard and hair, even in his later years. Some narrations mention that the total number of white hairs he had was very few, around 20 or less. Because of this, he did not find it necessary to dye his hair or beard. There are authentic narrations in Sahih al-Bukhari and Sahih Muslim where companions such as Anas ibn Malik (RA) and Abu Hurairah (RA) mentioned the Prophet's minimal gray hair. In some cases, it is reported that when he did apply something to his hair, it was oil or a natural substance for care, rather than for coloring purposes.

It is preferable to dye the hair. just because the prophet ﷺ did not dye his hair in some occasions does not make it sunnah not to dye. for example the prophet ﷺ recommended us to pray 4 rakats before Asr. but he himself ﷺ rarely prayed it. he ﷺ sometimes do this not to overburden us and show us that these things are not mandatory but recommended.

Eg Witr was mandated for Prophet ﷺ but not for ordinary Muslims, it remains Sunnah. As for the 4 rakah before Duhr, Prophet used to pray it (not only recommending) in fact he missed it once and prayed after Asr. Wallahu Alam

Jabir ibn `Abdullah (may Allah be pleased with him) reported that Abu Quhafah was brought on the day of the conquest of Makkah, and his head and beard were white like "thaghamah" (a plant whose flowers and fruit are white).
