That big knife at about 8:00 minutes would benefit from sharpening. I adopted a minor hobby, knife sharpening. I'm at a point where I'm learning to use knives properly, to keep them sharp. I sharpen my sharp knives for fun, really. I got a Henckels 8" sharp enough to slice through a beef rib roast in one stroke (except for 1/4" of silver skin and fat). With the amount of pressure he's putting on that super long of what looks like Japanese "white steel #2" gyuto, if it were sharp-sharp, should go through that wagyu in one stroke.
Is Japan open for foreign tourists? I want to fly there to eat these…
