    About Us.
    I share our organic homestead, called Byther Farm, with my loving partner, Mr J and our cat, Monty.
    We are a fifty-something couple who live on a smallholding in Monmouthshire, Wales. We are going green and creating a gentler, cleaner and more healthy life for our family.
    There is a large organic kitchen garden with no dig gardening raised beds and young food forest in which to grown our fruit and vegetables.
    I'm currently exploring permaculture farming as a way of life.
    We keep hybrid chickens and also have breeding flocks of Jersey Giants and Australorp chickens and Aylesbury ducks.

    I have been threatening to make plum wine for three years now. If I had done it back then, I would be enjoying a glass right now. I just picked a bunch of plums yesterday and will pick more today. No more procrastinating! Your wonderful, friendly teaching style makes me believe I can really do this. Here goes. Love your videos!     if you use a clothes peg on the stem of the wand you would be able to put it down to the level you want and leave it there, thus leaving both of your hands free to do everything else

    fantastic stuff and wonderful colours, its hard to leave it that long but defiantly worth it, i once lost a bottle under a cupboard and 2 years later the wine was amazing. ive noticed that if you drink a little to much the next day the hangovers are a lot lot less severe than the shop wine, less chemicals i suppose. great homemade produce Liz, thanks and take care

    Oh that will be lovely. I don't drink alcohol these days but I did love plum wine. After visiting Europe and drinking home made grog ,it's wonderful. How amazing and diverse you and mr j are . Well done sweety

    Though it might be surprising, those bubbles don't mean that it is still fermenting, during fermentation, sometimes the co2

    Wow. Id love to make some. I really hope we get plums next summer. The finished bottles look so vibrant and I'd definitely wait a couple of of years for them to mature. I don't drink but I'd love to try these. 💟💟💟🍷🍹

    That plum wine looks fabulous! My absolute favorite - plum wine. I ask for it for C-mas. The color of the other wines you've made are beautiful.

    Nice job on the video Liz. I've probably said it before but, I need to try making some wine. Your video really inspires me to get on it. I used to make home brew beer which was a lot of fun.

      I'm sure wine making can't be so very different from making beer - a few less stages and less ingredients possibly, so maybe wine is a bit easier :-)

      Liz Zorab - Byther Farm I think you are correct. Brewing a big batch of beer with friends took us from morning till early evening sometimes.

    Another great, informative video.
    My syphon is a straight tube with a hole in it about 1 or so from the end, to stop the sediment.
    I miss making and drinking my own wine.
    Must get myself some space and organize the time to start doing it again.

      I will, thanks Liz! I’m going to try elderflower and pear (if my pear tree bucks it’s ideas up!) haha I’ll make a cordial first, then add it in at maybe the second stage? Not sure yet, but I’ll definitely keep you posted xx

    Hi there, I had already de-stoned my plums and put them in freezer before I saw your video. Will this make much difference if I follow your recipe. Can't wait to try this, thanks.

    Ok. Good reasons to take up the offers of plums, etc this year. I also need my wine drinking friends to save their bottles!
    I have made elderberry gin before in one of those Nellie Rose cider bottles but this looks like a fun process. Also a good test of friendship when you can return the bottle of home-made wine back to them after the processing time! lol
    Was that normal yeast that you use for making bread in the last video?
    Seeing as it is mid Jan 2023 here rn, do you find you are accumulating a lot of empty jars now? During the summer i was as desperate as King Harold but for empty jars! I gave out so many processed foods and the decent jars were not returned. Bless them but my Dad and his best friend have been saving the single serve jars for me. I am really grateful for them as i can again repurpose them for gifts and save the larger, nicer jars for us.
    I think i will also push more (for me and my social anxiety), to offer our kids school to sell the extra starters we have, in stead of giving them to neighbours who clearly don't "garden". Again the pots weren't returned for next year, after explaining everything about being ready for a bigger space in these gardens they have...
    I can at least price them to the cost of the ingredients to jar or for the pots and the nutrients added and that will be my donation.

      You need to buy a dried wine yeast. It is not expensive and lasts a long time.

    MMMMMMM Liz that looks good, Would the sediment in the bottom be worth slinging in the compost? I dont think it would do any harm

    I know nothing of making wine so this was interesting. I did not realize it took that long to make wine. When my sister was about 19 she moved into a apartment with a room mate. They decided to make some beer. Of course they did not know what they were doing. They put it in the cabinet under the sink to keep it dark. Then the bottles started exploding. They would not open the cabinet because it was suppose to be kept dark. Later they decided to drink what did not pop the top or explode. I ask her later, how was it. She said not bad but it wasn't good either. They did not make anymore. I have not thought about that in years.

      I've never tried making beer, I remember my father doing so when I was a young child, it always seemed a bit of a mysterious process. Thank you for sharing your memory of your sister and her beer experiment!

    I'm Back from my walk with a big bag of sloes. I'll be making sloe gin for xmas presents and this time I'm also going to try it with Poteen. I'm not a drinker myself but they make great presents

    My sister desolves her sugar before she puts it into her jar. How sweet is your wine. I don't like a dry wine but I don't like it too sweet either. I know when you make a 5 gallon jug of wine you put 10 lbs of sugar and it isn't quite sweet enough for me.

      Hi Gail, I think the sweetness of the wine is also effected by the sugar content of the fruit used. I'm not experienced enough to experiment with it much, so Mr J's wines are anything from fairly dry to way too sweet! Yes several people have said to dissolve the sugar before it goes into the demi John, I haven't done it that way because it just makes more washing up, but I may well do in the future :-)

    Hi Liz, I just went back to these to rewatch since I just started a batch of mead, and I was wondering: do you analyze your juices ahead of time to figure out how much alcohol you‘ll have in the end, or do you just guesstimate how much sugar they have and how much extra you‘ll need?

      Hi Rebekka, I don't guess how much sugar they have. All my wines get the same 3lbs sugar for a UK gallon demijohn. Some wines are sweeter than others, some presumably have more alcohol, but Mr J is happy with whatever is made!

      @@LizZorab - I like that approach. Honestly, since it's just for our own consumption, I don't see why I should bother with all the analysis LOL
      I just started a demijohn of mead (5 liters, so a bit more than a UK gallon) but I'm looking into apples and those are more variable than honey.

      I store bottle standing up because I use recycled screw top bottles and I'm never completely convinced that they won't leak :-)

    What would happen if you just poured the pre-racked wine from one demi-john into another demi-john using a cheese cloth or a filter? Too much splashing? Also I love your channel! Thanks for your responses to comments! You are an awesome youtuber!

      Hi Anthony, you could do that but you'd probably spill a load of it and there's a risk of getting loads of oxygen into it so it might spoil the taste. Thank you for your kind words.

    Just made my first ever wine using Elderflowers and wondered whether I can bottle in screw top wine bottles like yourself, as I've read that you should cork the wine. Will screw tops be airtight for maturing over months or even a few years.

    Any tips on clarifying plum wine?

      I don't clarify my wine, but I do rack it several times if it's still very cloudy. If it's hazy - as in you can't see through it at all, it may have a pectin haze and I don't know how to deal with that at all (sorry this isn't very helpful). I know that you can buy wine filters, but I haven't used one.

      @@LizZorab Cheers , I got 3 gallons on the go at the mo but last year it didn,t clear very well , it is a fibrous fruit so I don,t mind and it still tastes great.

    Hi Liz, after you put the racked demijohn away for 3 to 6 months, do you need to change the water in the top plug? Also, do you add sugar every time you rack? Many thanks, J

      Hi, I check the water every now and then to make sure it doesn't evaporate and yes changing the water in the airlock is not a bad thing. No sugar is added when I rack the wine, it has had all the sugar it needs at the start. :-)

      I top up the water level to make a full demi-John (6 bottles).

    My.plum wine has went a very deep brown colour, I did not know to top it up with boiled cool water, I hope it hasn't gone off 😔

      Perhaps it's worth trying a tiny bit of it to see if it's gone off! If not and if it is still in a demi John you could top it up now. If it's already bottled, well then, no worries!

      I get what you are saying, but this is for home consumption so it's my partner only drinking the wine and I didn't spit into the tube.
