Fish roe balls recipe with greens - Ιndirect wood fired oven. In our mother’s village, Agios Theodoros in Karditsa, Greece, every year at the local festival, at the beginning of the Great Lent, the food was delicious. In those years, there was nothing better than fried fish roe balls, taramosalata, and the main course of the day: fish roe balls with greens in the oven. Our aunt Georgia (Yeorgia) used to cook two large trays of fish roe balls so that there was enough for everyone. I want to pass down this particular recipe, exactly as my aunt did when she taught me how to make it. She uses this recipe to this day, and every time we’re lucky to enjoy this unique dish.
