Same. I live in a small country and I can't buy a tub of mint choco ice cream in the grocery store. My only option is buying on the go in a cone and even then not every restaurant has it.

One of my kid's has coeliac disease, his favourite flavour used to be Mint chocolate chip, but for some reason all mint ice-cream has wheat products in it. I also find that using a whole 14oz can leaves an unpleasant milky film at the roof of your mouth. I only use half a can.

During Christmas there was some melted chocolate left over so I added some mint and spread it out kind of thinly over 2 pieces of parchment paper then I rolled up the parchment paper and put them in the freezer, after an hour or so I put one opened end over a container and crushed it a Lille and it went into my bowl with very little mess and now I’ve got my chocolate pieces ready for this recipe. Thank you for sharing.

For the forms stiff peaks part... it’s in the name. You need to get a whisk or spoon and make a peak with it. If it’s “stiff” then it’s a stiff peak lol.
