Would like to take time getting a few snips along the line where the skin fat and the meat meets (it's a bit sinewy) as the sinews tend to contract quite a bit, causing the meat to curl while cooking. Prolly not an issue for the thicker cuts, but thinner katsu then to do this more often based on experience. Snipping along that line minimizes curling, ending up with a flat katsu XD
What's the difference between katsu and snitzel? I am not sure if the small is big but they me snitzel and katsu look the same you just wouldn't normally put sauce on snitzel it and i think thats it?
Schnitzel usually uses veal instead of pork as well as uses more finer breadcrumbs which creates a more denser coating. Schnitzels also gets pan fried instead of deep fried and has more seasoning.
Schnitzel is pounded cutlets to make it thin (thinner than the katsu I am used to), and the coating should puff up and kinda separate itself from the protein, and somewhat deflate as it cools slightly. Some ingredients for katsu and schnitzel overlap, but it's more on how thin the meat is and how the crust fries imo.
