Did We Just Invent a NEW WAY to COOK STEAK??? Reverse Seared Prime Rib Steaks

Ever since I found out that the Weber Searwood XL had a rotisserie option, I've been thinking about this crazy way to cook ribeye steaks! And since my wife had a big birthday, I thought it was the perfect occasion to try these smoked and then seared prime rib/ribeye steaks... Not sure if you call it reverse seared prime rib roasts or smoked then seared ribeyes, but either way, these grilled ribeye steaks were fantastic!
We started by smoking prime rib roast on the rotisserie attachment of the Weber pellet grill. Then, we refrigerated the smoked rib roasts overnight wrapped tightly in plastic wrap. The next day, we sliced the smoked roasts into ribeye steaks and we finished them on the Weber Summit Charcoal grill.
And let's not forget about the butter, tallow, garlic, and rosemary basting that we did while the roasts were on the rotisserie. These ribeyes were fantastic, and while this was a "special occasion" cook, it was definitely WAY less expensive than taking 12 people out to a steakhouse. Enjoy!
