I just became a subscriber because you deserve it for braving this social media platform with all its cruelty. Im watching on Christmas Day. Im alone and more depressed than usual and thank you for your video.
I'm so sorry you're depressed. I hope you come back and hang out with me. I've been a little depressed myself lately, it's hard to find a purpose once you retired and kids have their own lives. I think that's one reason I decided to try the youtube thing, give me something to do and to "meet" other people who may be alone or just interested in a different part of the world than their own. I watch youtubers from all over the world.
I hear ya! I’ve had bought with depression too. Christmas is especially hard. But social media can be supporting too, just like those wonderful remarks from you! It always comes down to people. I enjoyed your first video - good job! I’m 66, retired at 62 to care for my grandson. I’m now caring for my 93 year old mother. We live in a 7-person, 4-generation household. My daughter and son-in-law do their own grocery shopping and cooking for their family. I shop and cook for my mother and me. We share one kitchen. I really miss having my own kitchen!

Good idea. I love stuffed bell peppers. When we were kids, my mom used to make extra of the stuffing part since it was our favorite. Still one of my favorite meals. I hope as it warms up, you are able to do a few gardening videos.

Hi Kathleen. I really liked your video. If I have left over chopped onion I put the onion in a freezer ziplock and put it in freezer and use the onion for when I make chili or goulash. I started doing this once I retired. A lot of times you just do not feel like chopping onion. This prevent you from throwing away a half of an onion that turned bad in the fridge. Which saves you money!
Try a little olive oil and add peppers first. They need longer to cook. Also covering makes it faster. When they are half done add onion and chicken. Then they will be done at same time. Stirring constantly prevents it from cooking as quickly a it could. No need to stir so much when in a non stick pan. Congrats on first video.

My way of being frugal no boxed foods . I buy only what’s on sale so if canned tomatoes are on sale I buy enough to last me the year and so on . Everything I make by scratch I do a lot of canning
I do mostly from scratch cooking but every once in a while crave some canned food like Hormel tamales, which most people probably wouldn't eat. I really like them, more than "real" tamales
I am in the process of getting rid of the processed boxed foods I have. For primarily budget reasons. The reason I ended up with all these dried rice and pasta dinner mixes is because of big sales on them. I am 66 years old on an ultra tight budget. I am currently doing a 25 dollar a week grocery challenge. I only buy animal proteins when they are on sale at a good price, or when they are in a special bin at local grocery store where food is a couple of days away from the sell by date. I am a huge salad fanatic and that is my main expense. I used to eat plant based and know how to make economy plant based dishes at a very low price. So I am finding myself eating that way again primarily due to budget, and meat only once sometimes twice a week. I find buying the large bags of broccoli , cauliflower and Normandy mix at Sam’s saves me a lot of money. I lately have been every other week gotten a rotissychicken at Sam’s club for only 4.96. Which is cheaper than a raw chicken. I debone it, freeze the bones for soup. I freeze half the meat for next week and use half this week. I have learned ways to stretch it I don’t like ground chicken and turkey. I would just as soon have the meal meatless. This summer I will be doing some work with the non profit in the national parks and will be camping there. The food there in the little towns around the park is expensive. So we shall see how I can adhere to the challenge there.
Good luck! Those rotisserie chickens are great. I've bought them in the past for chicken soft tacos, easy when you're working long hours. Then leftover meat and bone go in the freezer for soup later.
I make these all the time. I call them deconstructed stuffed peppers. Sometimes i add broth in and turn it into a soup. They freeze wonderfully in the event you want some for another night without all the cooking. Congratulations on making your first video! You did anazing! Keep the videos coming!
Congratulations 🎉Kathleen on your first video. I was typing a reply and it got lost! I am a senior with a small vegetable garden growing in the Spring summer and fall. I froze only yellow and green beans this year, for winter. I buy from local farmer eggs, honey, some meat, other vegetables, fruits, spring to late fall. I get one winter box full of squashes, root vegetables, that i use up first. I may buy some onions, frozen vegetables through the winter. Very limiting, only on sale items. I buy frozen fruits, like berries for winter. 🍎 apples for fresh fruit, or crisp, or baked apple dessert. I stock up on canned, and dry goods when on sale. I have a small pantry. I hope to see more ideas from you. 😊 God bless.
I cook something very similar to this but I add a quarter to half a cup of red lentils which pretty much disappear into the mix but it really fills you up so you can’t eat any where near as much because you are so full.

I am retired also for two years. It has been a learning experience for sure. With food prices going up daily we also eat out of the garden, watch all sales and buy in bulk. Rotation is very important in your pantry. We don't waste anything. Good luck!
For future reference, if you cover kale with frost fabric or even just fabric (I have used tablecloths and sheets LOL) it will survive the frost and cold weather. Love your skillet meal, looks yummy!

The kitchen, yes, the rest of the house? My kitchen is fairly new after the hot water heater blew up on me and destroyed everything in there and then floor in the livingroom and hallway. I'm Doing better than I used to, But I want to get better. I do not have enough savings and I don't buy much of anything except for food and Cat litter and gasoline. I waste money on junk food and processed foods that I'm not even supposed to have. Anyway I have subscribed and I am looking forward to many more videos.
I eat way too many potato chips, my favorite are the low salt. Cheaper to buy Kroger store brand than Lays (that are my favorite). I don't like the Wal-mart store brand. I'm trying to eat more fruit and nuts instead.

Hello, I happened across your video and am glad that I did. You did a great job! We all have words on the tip of our tongues now and again, so please don't feel as though you're alone. The word you may have been reaching for, could have been 'edit', but then again, maybe not. When the frustrated word search hits me, I try in vain, then sometimes mentally go through the alphabet, hoping to jog my memory. More than once, my husband or I have been in bed either near sleep or having awakened and we will triumphantly announce to the other - "Gist, that's the word I was thinking of, Honey. I finally thought of it." The other of us generally mumbles a sleepy, "Good for you, Love." Life's crazy, isn't it? We have to chuckle at the funny, little things we all do. Your meal looked very good, and I love it that you don't waste a thing, great job! Take care and I will be checking in to see other videos you share.
You showed up on my feed and I’m so glad you did. I really enjoyed your video and I subscribed within about the first 5 minutes. I could just sense that you were a very genuine and nice person. I’m glad you showed us your recipe for I guess you could call it Unstuffed Bell Peppers, lol. I never thought of making them like that and I can’t wait to try it. It’s so much simpler. I have a small garden area too and I like to freeze the things I grow but can’t eat fast enough. So this dish makes it nice to have everything on hand and not have to do a lot of steps at one time to get it ready. I can’t wait to see your future videos. Chewy is so adorable. No worries about the sounds he makes. I bet he’s a lot of company for you. I have a cat named Whitley. He sure keeps me from getting lonely. I trained him to push word buttons to talk to me and sometimes make UA-cam videos with him doing it. My problem is editing. I tried to add word text to the first video but made a mess of it and had to start all over and gave up. I finally managed on the 3rd but was afraid to embelish it more to make it nicer looking. @kathleensmith6200 like you, I had a huge crop from three green pepper plants, dehydrated most of it to add to soups and meals. Tried growing lettuce, but the texture was "soft" so I didn't care for it. I prefer a firmer lettuce with more "crunch". Looks like you have several garden beds. Do you have certain plants you like to grow?
@@chrisknisley93 Lettuce never seems to do good for me here. I usally grow some type of green and use it instead. I try and grow a variety of things. I especially can't wait for the first tomatoes, they're the only thing I don't eat fresh in the off season. I refuse to buy them in stores because they have no flavor. Tomatoes did awful last year, plants died, except for 2 Sungolds, that produced through November.
@@kathleensmith6200 tomatoes have always been a challenge for me here in northern Illinois, though others are successful growing them. I agree, hot house tomatoes in the winter have no flavor, and I do not buy them. I did grow spinach and arugula this year, and added it to my summer salads. I may grow it again next year. Unlike most gardeners, I make my crop choice in the spring, based on what I am eating at the time. Do you plan your garden in advance?
@@chrisknisley93 Kind of. I always run out of room in my garden, though. I have too many seeds. Some very old. I thought about doing a video about clearing out old seed. I got rid of or attempted to plant some last summer. I hate throwing them out so will try sometimes.

I’m looking forward to more recipes and what ever additional content you post. I also retired early ( from Social Work) due to my own and my husband’s health issues. I started a small backyard garden, and have been focusing a lot on living a more simple, frugal, traditional lifestyle. P.S. I started saving all my vegetable scraps in the freezer and use them to make delicious and nutritious broths, which I then pressure can for shelf stability.
Your dish looks great, great first video. I do not eat meat, fish or dairy (plant based) but I can learn from everyone and make my own substitutions. Thank you for sharing.

The kitchen, yes, the rest of the house? My kitchen is fairly new after the hot water heater blew up on me and destroyed everything in there and then floor in the livingroom and hallway. Your video just popped up in my feed. I have been retired for some time and living on Kind of a small income. I am 72 And I'm trying very hard to live more frugally. I'm Doing better than I used to, But I want to get better. I do not have enough savings and I don't buy much of anything except for food and Cat litter and gasoline. I waste money on junk food and processed foods that I'm not even supposed to have. Anyway I have subscribed and I am looking forward to many more videos.
I eat way too many potato chips, my favorite are the low salt. Cheaper to buy Kroger store brand than Lays (that are my favorite). I don't like the Wal-mart store brand. I'm trying to eat more fruit and nuts instead.

Hello, I happened across your video and am glad that I did. You did a great job! We all have words on the tip of our tongues now and again, so please don't feel as though you're alone. The word you may have been reaching for, could have been 'edit', but then again, maybe not. When the frustrated word search hits me, I try in vain, then sometimes mentally go through the alphabet, hoping to jog my memory. More than once, my husband or I have been in bed either near sleep or having awakened and we will triumphantly announce to the other - "Gist, that's the word I was thinking of, Honey. I finally thought of it." The other of us generally mumbles a sleepy, "Good for you, Love." Life's crazy, isn't it? We have to chuckle at the funny, little things we all do. Your meal looked very good, and I love it that you don't waste a thing, great job! Take care and I will be checking in to see other videos you share.

You showed up on my feed and I’m so glad you did. I really enjoyed your video and I subscribed within about the first 5 minutes. I could just sense that you were a very genuine and nice person. I’m glad you showed us your recipe for I guess you could call it Unstuffed Bell Peppers, lol. I never thought of making them like that and I can’t wait to try it. It’s so much simpler. I have a small garden area too and I like to freeze the things I grow but can’t eat fast enough. So this dish makes it nice to have everything on hand and not have to do a lot of steps at one time to get it ready. I can’t wait to see your future videos.
Chewy is so adorable. No worries about the sounds he makes. I bet he’s a lot of company for you. I have a cat named Whitley. He sure keeps me from getting lonely. I trained him to push word buttons to talk to me and sometimes make UA-cam videos with him doing it. My problem is editing. I’d probably be encouraged to make more videos if I could figure out to do it.😊

I tried to add word text to the first video but made a mess of it and had to start all over and gave up. I finally managed on the 3rd but was afraid to embelish it more to make it nicer looking. I wanted to do some voice over but I have no clue. I need to watch more how to videos. Yeah, Chewie keeps me company. Whitley sounds like a smart cat!

Thanks! Weirdly yesterday a recipe for "stuffed pepper soup" came up on my Facebook feed. It looks really good and has red and green peppers in it. I may have to try it someday.
I've made that and it tastes like stuffed peppers! I also do it with chopped cabbage....tastes like cabbage rolls, but easy and quick!
I'm diabetic, I'd have to divide it before I add the rice. It looks very tasty since I do love stuffed green peppers. Tyvm 😊

@kathleensmith6200 like you, I had a huge crop from three green pepper plants, dehydrated most of it to add to soups and meals. Tried growing lettuce, but the texture was "soft" so I didn't care for it. I prefer a firmer lettuce with more "crunch". Looks like you have several garden beds. Do you have certain plants you like to grow?
@@chrisknisley93 Lettuce never seems to do good for me here. I usally grow some type of green and use it instead. I try and grow a variety of things. I especially can't wait for the first tomatoes, they're the only thing I don't eat fresh in the off season. I refuse to buy them in stores because they have no flavor. Tomatoes did awful last year, plants died, except for 2 Sungolds, that produced through November.
@@kathleensmith6200 tomatoes have always been a challenge for me here in northern Illinois, though others are successful growing them. I agree, hot house tomatoes in the winter have no flavor, and I do not buy them.
I did grow spinach and arugula this year, and added it to my summer salads. I may grow it again next year. Unlike most gardeners, I make my crop choice in the spring, based on what I am eating at the time. Do you plan your garden in advance?
@@chrisknisley93 Kind of. I always run out of room in my garden, though. I have too many seeds. Some very old. I thought about doing a video about clearing out old seed. I got rid of or attempted to plant some last summer. I hate throwing them out so will try sometimes.

Hi Kathleen. Your video just popped up in my home feed. I enjoyed watching your first ever video and want to wish you every success here on UA-cam! I’m looking forward to more recipes and what ever additional content you post. I also retired early ( from Social Work) due to my own and my husband’s health issues. I started a small backyard garden, and have been focusing a lot on living a more simple, frugal, traditional lifestyle. P.S. I started saving all my vegetable scraps in the freezer and use them to make delicious and nutritious broths, which I then pressure can for shelf stability.
