As someone who got into anime when it was already somewhat like this, I've just always treated anime like I do videogames. There are so many being made, and so many gems with hundreds upon hundreds of hours put into them lost, that I treasure the ones I do find and have fun with them. (Staccato btw)
My solution to this problem is putting my favorite genres as my top priority. So Shonen and Mecha, with exceptions going to anything made by Studio Trigger and anime movies/OVAs right off the bat, aside from if I just wanna watch it that badly. So that gives me a good niche range to stay in that I like that also won't pideonhole me. Edit: Last note, this is also why I don't watch seasonal hype anime until their TV run is done as a hard rule. If Attack on Titan can turn on it's heels to present itself as slowly becoming a Seinen throughout the anime, then I don't want to feel like I sunk my time into a story that i'll end up hating the direction for. That's why I want to watch Heavenly Delusions really badly, but only *after* all of the TV episodes are aired.
Yeah, it's gotten a little much, especially since I have my job and want to try writing my own stuff. Fortunately for me, most are just garbage isekai or harem or what have you, so I just focus on anything that catches my eye. Sometimes, that includes unusual stuff like Thunderbolt Fantasy (more puppetry than anime but it practically feels like it anyway) or Re:CREATORS. Other times, I just look at older stuff like Record of Lodoss War or whatnot. Also, nice to see someone else appreciate Vivy. Such a great anime.
