  • In this episode of Wisconsin Foodie, Host Luke Zahm visit’s Fairchild restaurant in Madison. Fairchild is owned and operated by Chef’s Itaru Nagano and Andrew Kroeger, both highly acclaimed chefs that are focused on sourcing the best local ingredients, utilizing classic techniques and pairing that with fantastic hospitality. We follow the story of one of those ingredients, cheese. Dream Farm located in Cross Plains is producing some very small batch but very high quality cheese using both cows and goats. Chef’s Itaru and Andy stop by the farm to meet Diana and Alicia Murphy, owners, farmers and cheesemakers and taste some cheeses that they will bring back to the restaurant to prepare dishes with that evening.

    Just down the street and have never been to Fairchild. Watching this is inspiring me to change that ASAP. Also the camera work on this show is outstanding 💫
