Measurement is all wrong. I'm so mad right now. I followed your measurements and pie filling got so dark. It is 3/4 tsp not 3 1/4 tsp. It is 3/4 c not 3 1/4c.

My mom was an excellent cook. The day after Halloween pumpkin was oven baked into a puree, frozen and the used for TG. Back in the 60's we didn't have 'pie pumpkins' just the Jack-O-Lantern kind and they made a very good pie also.
I make it every year but I cheat on the crust and the cream, because I was giving away about 30 pies - what I also did differently was I didn't puree the pumpkin, I found the coarseness gave it a rustic texture but you just made me want a pureed pie with homemade crust and whipped cream
Well I've tried chef John's easiest pumpkin pie recipe that uses condensed milk and Chinese five spice. I feel confident now I can try something a little more complicated.

3 eggs, 2c pumpkin puree, 1c heavy cream (room temp), 3 1/4c granulated sugar, 1 1/2tsp cinnamon, 3 1/4tsp ginger, 3 1/4tsp ground all spice, 1/2tsp kosher salt, 1/4tsp ground cloves, 1/2tsp nutmeg
I think it's 3/4 cup granulated sugar, not 3 1/4 cup
