      I prefer to use a brand new Le Creuset Dutch oven for every fry session. Plus I also tend to buy a new Aston Martin once the ash trays are full.

      Maybe I could use those folding lap trays- like breakfast in bed type. I can’t believe it never occurred to me to take a table instead trying to stabilize everything on the ground!

    I never seen someone love a good piece of cold fried chicken like myself. It's certainly its own thing just like cold pizza as you say. Video well deserved and appreciated.

    I grew up in Wisconsin in the 60’s and 70’s. My Mom always made cold fried chicken, potato salad and watermelon for a picnic. So good!

    That's the type of "glass" I drink wine out of because I have no wine glasses! Was the next best thing I had and liked the country look, still using it today!

    Using some corn starch in the chicken breading helps it stay crispy better.

    I love a piece of fried chicken right out of the refrigerator. It's really good sliced for a salad topping, too. If I make it just a wee bit saltier than normal, it really boosts the cold chicken flavor. The downside for me is, it's not as good hot. The salty buttermilk brine should do the trick.

    The breading on these legs was amazingly crisp and seasoned perfectly I had some trouble getting it to stick to the chicken because: the legs I bought were huge so they crowded the pan and stuck. Once I remedied that issue they came out beautifully.

    Buttermilk + time + corn starch = Mmmm! Absolute secret to crunchy good chicken! Great for the next day. Koreans know this secret by using potato starch. Lemme tell you, KFC (Korean Fried Chicken) is the bomb! Great recipe, mate.

    I like your more recent fried chicken process you used for the buffalo chicken sandwich. Best process ever salt then all flour then all buttermilk then breading. Comes out perfect

    I've always been a huge fan of cold fried chicken. I actually prefer it most of the time. Whenever I get it, I'll always order more than I'll eat in one sitting so I can have some the next day out of the fridge.

      Same. My favorite is Chinese chicken wings the next day straight from the fridge. I'll literally buy them and then put them in the fridge as soon as I get home without eating a single one cuz I think that much better cold

    Hey Bri, do we need to clean up the oil between frying the different batches? If so how do we do it?

      I don’t think you need to clean the oil between batches. However, after you finish cooking all the chicken, I would recommend filtering the leftover oil (make sure it’s cooled down first!) through a coffee filter in a strainer (like a mesh sieve) into a container to use whenever you fry something next. It’s economical, saves oil, and you don’t need to worry about disposing of the oil until after a few fries!

    Have you tried frying in a fat that’s solid at room temp, e.g., lard or refined coconut oil? I assume it would stay crisper that way.

      I have only done that in the pro kitchen for staff meals, I loved lard but didnt notice it was much crisper than normal. Good idea though. Ill have to give it another try.

    Brian - when I go straight from wet buttermilk to flour, my breading falls off after cooking.. some say chicken prices need to be patted dry before rolling in flour. Would you happen to have any tips?

    Using milk with a bit of lemon juice work as well as using buttermilk?

    For the gluten free version did you just substitute a gluten free blend?

      You could use that. but we went with 1.5c white rice flour, 1.5c potato starch, and 1teas xanthan gum. Just as good and crispy as the reg versions

    Tried the recipe and ended up with way too much breading on the drumsticks, the breading ended up crispy but not the chicken skin underneath it. I will try this again someday but without the double breading.

      I am thinking I could double dip in the dry coating and leave off the crumbles?? I too found the skin underneath looking icky and slimy.

      @@nathanboeger978I'm not quite sure what you mean. That 50-person restriction is up from 25 a few months ago, and we can now gather indoors in groups of up to 25, up from 10. Plus, our provincial government is looking at lifting all safety restrictions by March. Things are finally getting better.

      @@nathanboeger978 I guess it depends on where you live. Like I said, come March, this should all be over for us. Restrictions have also been loosened at the US/Canada border. The vaccine seems to be doing its job, which is keeping Covid 19 patients mostly out of the hospital. I actually currently have it and am quarantining for 10 days, but my symptoms are very mild, most likely because I got the jab. It's not my problem that you feel "opressed".
