Love... love... these recipes. I make it as a sandwich cake. I melted peanut butter chips with heavy cream for choco filling. I made a cranberry-orange jam with the yellow cake. Both were better the next day. I serve with whipped cream. For the choco, I replaced 1/4 cup milk with double shot of expresso. Yummy! Do you have a poptart replacement? We live cinnamon no frosting poptart for breakfast... not to sweet. The grocery store one has a lot of weird ingredients.

Kara..Hi I am starting an Amish friendship starter for my son ( he loves these quick breads )..and usually just likes white bread from store..there is a recipe using this starter for a sandwich bread but it says to use a bread flour or all purpose flour..I have made the honey oat bread ( your recipe) and added regular sourdough to it and comes out great..but for a whiter bread and or to get him eating a healthier bread..what flour mixture would you use to get this consistancy - maybe..Only day 3 of my starter so have time..Patricia

I would still recommend to keep it in the fridge or freezer, If you do vacuum seal, it would likely last and not go rancid, but the nutrients of the flour will likely be much less. However, the bran will still be there adding fiber regardless! :)
I would still freeze or refrigerate to lock in the nutrients. But, If it is vacuum sealed I don't think it would have a problem going rancid or anything for awhile.
Because freshly milled flour starts to oxidize, and loose it's nutrients shortly after milling, so keeping it in the fridge for up to 7 days or freezer for up to 4 months will help keep those nutrients in. :)
You could sift a little, but I don't find that it is necessary. I would still recommend storing in the fridge or freezer, because most home sifters still leave a portion of the bran and germ in.

What kind of cocoa did you use that you said smelled so good? Do you have a link for it?
I believe this was the Cocoa Powder (not the Dutch cocoa powder) from Hillside Amish grocery store.

I don't really mill corn, because my daughter has a corn sensitivity.

You could, but the amounts may be slightly less for the flour, I don't know the exact amount for all purpose flour off the top of my head.
