I think Daym is choosing biased Best/Worst restaurants. The places he’s selecting have low ratings but also low number of reviews. It’s essentially a low sample size. There might be places with slightly better ratings but 3x as many reviews, making it an overall worse restaurant.

That's how oxtail is supposed to be. It has a very unique texture as it's the stewed gelatinous meat between the bones of the tail. Those little soft pieces you were wondering about are called "spinners" and they're like dumplings usually cooked with oxtail.
I've got a 12-yr-old son and when we go on roadtrips, he'll spend hours reading me yelp reviews of restaurants in whatever town we're heading to that night. He'll spend an hour deciding between Del Taco and Taco Bell. Oh, it's just super. Can't turn on the radio, 'cause that will interrupt him. So I'm going to set him on to this video series, maybe with a pair of headphones, and hope for some peace and quiet on our next road trip.
I love how, the world around, “poor folks” food is similar, and delicious. Growing up, my mom made the most wonderful shortening bread, soaked with butter and blackstrap molasses, and this was served with oxtail soup and a side of plain spaghetti fried in butter and black pepper. She made the best black eyed peas with ham hocks and purple onion, and that was served with honey cornbread and turnip or mustard greens. And dessert was usually pecan pie or chocolate sheet cake.
It really is an interesting thing...my theory has always been that people who really have to put serious thought in to both what they can afford to get AND how they can dress it up/spice it/etc. to make it last (or stretch it, or hide the fact that the ingredients are lower quality) just develop better abilities to manipulate flavor and ingredients in ways that resonate with the average person. Something I've noticed with people who have lots of money is that they rarely (if ever) personally cook or make food and are heavily influenced by expectation and reputation. "Poor folk" have the motivation and interest in making the average or even sub-standard taste extraordinary, and I think that's why we consistently see what you're talking about around the world. Dining out has a weird ratio/curve in terms of cost/quality. The difference between say a $5 steak at some diner and a $20ish steak at a decent place is exponential, I mean the latter is 10 or 20 times better in every way (at least in my experience). But the difference between a $20 steak and an $80 steak is minimal, at least in the few times I've been lucky enough to have something of that price point. One of the richest people I know has an undisputed favorite restaurant/belief of what the best-tasting meal you can buy is. It's...Outback Steakhouse, the 12oz Ribeye medium-rare with mashed potatoes and French Onion Soup. Don't get me wrong, that's a tasty meal, but like....yeah.
They could have improved their recipes over time. I'm a chef and I'm constantly improving old recipes. For example, my mac and cheese now tastes WAY better than it did a few years ago. I've tweaked my own recipes and it worked. So those reviews could have been genuine back then but you could have experienced the new and improved version. It happens.
The difficult part of this... most patties are manufactured and shipped to these places unless they specifically say they make their own(rare). They are usually great unless burned in the baking process, so you are going to get a pretty uniform good taste on that. The other thing that I have learned about some of my fav. restaurants is that you have different cooks doing hella different shit when it come to food prep!!! I know for example when to go to my fav chinese place(evenings) because it better prepared that lunch time... it's like they're leaving out some sort of spice or important ingredient! I personally prefer consistent mediocrity to inconsistent perfection... that bi-polar dining does not work for me. Unless, of course, you can figure out the secret of the best time(who's cooking) to go there!
sometimes these yelp reviews are coming from people that are trying a certain ethnic food for the first time and decide they didn't like it sometimes some of these reviews are from people having a bad day or sometimes the restaurant is having a good day and subverts the expectations set by the reviews

Dutch pot in my area is like a Jamaican restaurant McDonald's basically, it's lackluster and generic but I'm in south Florida and we got plenty of Jamaican restaurants to choose from. Dutch Pot is just like the generic version for the masses, like Golden Krust Patties... meh...

Dude you were in love with the people and atmosphere, more than the food. You were served your sit down food in to go containers, the amounts were pretty miniscule and the dishes simple as they come. Sometimes you wanna love something so bad and become bias.
One thing that I noticed from Gordon Ramsay's videos when he would go to help restaurants stay in business, is that when the menus were way to overloaded with multiple different dishes, they would generally not have anything good. They need to have more simplified and concisely prepared dishes rather than just a ton of different things.

My main issue with oxtails is that they cost way too much for way too little at my local supermarkets lol like I can buy a huge 2lb london broil steak for just $10 instead of just a few small pieces of oxtail for the same price.

Bro, this straight up bringing me back to my army days. We got a sergeant transferred over to or unit that had been on base for 10 years. Legit knew every dive and joint I'm the 3 cities around Campbell. Walk in one day to her and my buddy debating what better, Jamaican or Ethiopian. I sided with my buddy and she asked why. Told her I'd never had Jamaican food in my life. Not kidding you, 10 minutes later we are in her car driving to a little hole in the wall resteraunt next to a head shop. Got me oxtails and rice, beef patty, and a Ginger Beer. Not even kidding when I saw that was one of the best damn meals of my life

Oxtail always needs extra gravy
The oxtail round my way (Edmonton, London) is excellent, soft, gelatinous and tasty as hell, great sauce and goes well with their rice and peas.

I've seen Jamaican restaurants in my area switch chefs alot maybe thats it also the food usually isnt cooked the same day so that could be it too you mite have just lucked up and pulled up on the right day

i love oxtails i make them at home all the time and they looked very good on your plate
My main issue with oxtails is that they cost way too much for way too little at my local supermarkets lol like I can buy a huge 2lb london broil steak for just $10 instead of just a few small pieces of oxtail for the same price.
in my area the oxtails come too big and cost about $12.00 for 5 pieces at the grocery. Prefer the smaller ones. Ridiculous

Bro, this straight up bringing me back to my army days. We got a sergeant transferred over to or unit that had been on base for 10 years. Legit knew every dive and joint I'm the 3 cities around Campbell. Walk in one day to her and my buddy debating what better, Jamaican or Ethiopian. I sided with my buddy and she asked why. Told her I'd never had Jamaican food in my life. Not kidding you, 10 minutes later we are in her car driving to a little hole in the wall resteraunt next to a head shop. Got me oxtails and rice, beef patty, and a Ginger Beer. Not even kidding when I saw that was one of the best damn meals of my life
Ox tails should not be chewy and it sure as hell should not be gamey. It should be juicy like that chicken. Great review...
