How often do you need to perform the sanitization process to prevent this problem? I guess people think that since ice is made from clean water and freezing slows the growth of bacteria, there's nothing to worry about? I was at a wedding venue years ago. They were making "fancy" drinks with ice. One of the "cooks" dropped the ice scoop on the floor, and then kicked it under the counter trying to pick it up. She got a hold of it, and continued making drinks with the same scoop.
Should clean the icemaker at least once per week
Burn your ice wells every night!!! Do your machines once a week on the slowest night, mold/ debris will easily clog the drain. No ice machine should ever have this level of debris in it.
As a service guy, you get to diagnose, fix, and educate people on the problems.
