IIRC you earned points/funds during the missions that let you buy new aircraft types and also hire an optional friendly AI plane to back you up for the mission.
No, it has expert controls: full pitch, roll, and yaw. However, it doesn't support any analog control method. Ace Combat 2 and 3, among other games, actually support the Dual Analog and DualShock controllers as well as this awesome Analog Joystick controller for the PS1.

if you're talking about the actual cosmetic skin of the airplanes i have no clue either lol, dont think i ever found out how to change those
There's a cheat code to make your own or your wingman's plane look stock.
