I had this today with dhal and rice also some lime achar🥰. We also peeled the stem and chop it up with the leaves. It doesn't scratch if you slow cooked it. ❤

You wasted that fresh eddoes leaf on the big hard stem on the leaf u peel it there is a thin layer like plastic on it and u chop the whole thing up very delicious that's how we do it in Essequibo coast look good my mouth was watering didn't had it for a long time

Sharmin you should have really eat that food with your fingers and bite it lol. That is one delicious meal that anyone can die for. The ones in New York is Dasheen bush not eddo leaf. It taste different.
The strength of the bagie is the stem and veins that you throw away. We used to throw away it and never used to cook it back home.I learnt to cook it from our Trinidadian brothers and sisters. The cut every pieces up. Next time you go to the Trinidadian Roti Shop/Restaurant you can buy a serving and try it. It's richer. You don't have to steam it either because you are throwing away the good value of it.
