Good afternoon. I am enjoying the video. The leaf is used to make stew. It is very rich in iron. It has to be chopped finely and fried on low heat then simmered in coconut milk for about 15 to 20 minutes. Its very tasty. The leaves are very costly in the supermarket.

Nice harvest, another way you can cook it is boiled and then fried with onions, garlic, scotch bonnet peppers. My grandma use to some add salt fish. Love your adventures 😍

Great video..love the vibes...try boiling the eddo with the skin....the skin slides of quite easily and it leaves you with more eddo to enjoy and less wastage of the eddo

You will itch very badly in the mouth if eaten raw. It is also advisable to wear latex gloves while handling the leaves as they are itchy with their saps on the back of the palms especially. You can harvest the young leaves for cooking, but remember that once you remove the leaves, you are actually reducing the "cooking" abilities of the kitchen of the plants as the leaves are responsible for manufacturing food for the whole plant. You can balance it and not be too greedy on the leaves, or else you have few developed corms (Edo). Thanks.
I do wish people would not call Malanga, Taro, or Edo - Elephant ear. Elephant ear is the common name for a related (non-edible) cousin of this plant. If you purchase an elephant ear plant from ANY store- it is NOT edible.
Something is defenitely wrong with your soil type. Edoes never take that long. Next time try top soil and manure: goat, or cow. But your potting mix is not for edoes. A few months and they should be mature; try the top soil and manure

Lol yes ,baby eddoes seedlings. With potatoes they call them "seed potato" so I assume it's the same for eddoes. Thanks for the love and support!

when the leaves get big and start to yellow and die out you harvest, usually 7-8 months after planting

Mine grow in full sun. I'm in the Bahamas... never harvest any as yet. You boil them in soup n taste so good
