Very good description of the cuts Phil. Only comment I would make is consider the downward sloping (below horizontal) branch angle training for all fruits (and nuts) except pear-keep thos around horizontal. Will keep sucker growth down and promote better fruiting. Your branches will do this somewhat naturally as they near fruit and the weight shapes them but earlier training can promote fruiting faster. Check out Jean-Marie Lespinasse’s book on Growing fruit trees: Novel concepts and practices for successful care and management. It really changed my pruning concepts to training more and pruning less. You would enjoy the read.

When it comes to last years planted trees planted in the late late spring, would it be wise to prune that following year in the winter?
Many people would advise to prune your tree when planting and you can probably skip the first winter pruning after that

How often should you prune?
I prune a couple times a year but I am also managing dwarf fruit trees. Most people prune their trees once a year during this time
