and its happening... im from Oaxaca and the downtown is full of commerces dedicated to foreigners and has become only enjoyable to wealthy people. Finally, Oaxaca does not belong to the Oaxacan people anymore.
mira, que chulada. we had an underground oven just like that one built in our backyard here in san diego a few years ago. so far, i've only used it for cochinita pibil. which has been absolutely amazing. i'm dying to make barbacoa, birria, & cabeza, i just have no idea where to find pencas de maguey. i can't bring them from TJ & they don't sell any in the mercados around here. don't want to hack up some random agave plant somewhere...
Don't forget the mole!! I'm glad you covered a small portion of how to make Mole. Check out Curra's Grill, Oltorf, Pollo Con Mole, it's the best. Excellent video.
My mom every year for my bday she makes it from scratch. She’s from Cd. Mante, Tamaulipas Mx. Oh man! let me tell you it’s the freaking best! 🔥 💯 btw I’m 38 😅 5 more months to wait 😂
That pit is from a rich person. My grandparents oven didn’t have brick walls, and they didn’t used tubs. Nothing better than la barbacoa de Texcoco, it’s birth place, Texcoco The holy grail of La Barbacoa.
Depends who cooks it tbh. I’ve visited Oaxaca in 2014 and had this barbacoa dish. It was very delicious. I can still smell the aroma in the neighborhood when it was being cooked. 🔥
They serve it with some huge tortillas, I think they’re called tlayudas. It’s about 20” tortilla 😂 I visited there and had this same dish. Boy… I tell you, that man wasn’t over reacting how good that barbacoa is/was. It was very delicious. I visited 2014 and went back in 2017 for the food🔥
I thought they use copper instead of the galvanized metal? I know the thing they don’t like about copper is that when the heat fluctuates it’s harder to keep it steady. I’m thinking it’s safer?
Hey buddy you can go to visit Rancho Alfaro Oaxaca , there’s the Mezcal el viejo Manuelon they do barbacoa and then you can try el Mezcal. They speak English very well too to tell you the history of this town.
You haven't tried Barbacoa Oaxaqueña my friend, Oaxacans make the best Barbacoa either enchilada or no enchilada, you gotta try it and always goes with some consome too and masita
I have a feeling oaxaca and all these native places are going to get so packed with tourists that its no longer going to be magical
and its happening... im from Oaxaca and the downtown is full of commerces dedicated to foreigners and has become only enjoyable to wealthy people. Finally, Oaxaca does not belong to the Oaxacan people anymore.
@@e_lote this is happening everywhere else in the world, sadly its a global trend.
Its part of who we are as humans thats how civilization have came and gone.
When a dude from Austin shows up with a cooler as a backpack then you know it's over.
Not the tourists but people immigrating into an area that changes the traditional culture into a boring blend of multiculturalism.

it all looks delicious. But the galvanized tub on the fire concerns me. That zinc coating is poisonous.
Never look in the kitchen.😂😂

I've had barbacoa a few times and it has always been served with fried corn tortillas. How is it traditionally served in oaxaca?

Looks excellent, except for cooking inside a galvanized tub.
No one ate the Gazpacho, where did it go?.. 😂

@@ColibriZurdo that one you are 100% correct
All Mexico has fine cuisine. 🔥 depends on the cook and how heavy/ light he/she is with the seasoning 👍🏼
That galvanized tub... Hard pass 😮
cmon yeti, all that money and over priced products and yet only 1080p uploads?
🤣
I'm confused. What does this have to do with coolers? Great video, though.
Why is everyone crying about the galvanized tub? everyone in mexico uses them to cook
I have few coolers yeti , and was thinking its just products , change my mind ans its more of it .
Why have guitar music playing while they are talking?
Why was he using Thai basil 🤔
Why do Italians use tomatoes in their sauce if they aren’t indigenous to Italy?? Because fusion has ALWAYS been the norm.

Looked amazing ...till I saw the galvanized tub.
Agreed....
1st world problem. No were else in the world. 😢
Pretty sure the galvanized tub is only poisonous when it gets heated up real hot or cooked with acidic food. Oh wait.🤔
It's only a lil stomach cancer. Do you really wanna live forever?
Bro your American food is full of worse 😅😂
@yeti it was an awful choice to let him ruin this experience of the origin on your channel.
What’s the point of this. Yeti what are you doing
