Using sprue is a cheap but time consuming process where green stuff is the opposite in that it takes relatively little time to do, but depending on how many bases you're working with can be more expensive. Also since green stuff is a putty there are more options for how you wish to tile your bricks, where sprue is more uniform in shape and solid so you wont get a lot of variety without putting in some extra work.
Measure the worth of your time. If you had to watch a football game you didn't want to I could see this. But oh lord there are cobblestone pieces at hobby lobby for less than 5.00. You couldn't spend 5.00 to speed paint 5 figures so pick your poison.
I agree, there are cheap and easy alternative ways to do this. The point of this video, and the others in this series, was to show what you "could" do, not what you "should" do. By exploring different materials that are readily available I hope to open others up to thinking about what doesn't come pre-packaged and designed for purpose and instead seek to find alternative means to achieve unique miniatures and basing.

What glue are you using for this?
Tacky glue, it's like a thick form of Elmer's glue. Great for large surfaces, but you can use pretty much any type of glue for this.

Hay this might be a dumb question but how dose hitting the base with fire make it easier to round if your just going to sand it down?
The heat rounds the sprue, filing just makes it uniform in height so it’s not relatively flat
