It’s time for more recipes! If you remember, way back in March 2022, we filmed a TON of recipes. Unfortunately, just a few short months later, our lives kind of blew up when we found out I had stage 3 ovarian cancer. We are FINALLY getting back to sharing more of the recipes… and this one is just too good to keep a secret any longer!
Before Brian and I switched to eating a whole food, plant-based diet, we loved to make a turkey meatloaf recipe from Bobby Flay. After we made the switch, we found ourselves missing this comfort food classic and set out to make our very own plant-based version. And I have to say, it turned out WAY better than either of us expected!
This 100% meat-free “meatloaf” is packed with a ton of veggies including mushrooms, bell peppers and zucchini. The ketchup & balsamic glaze adds a TASTY punch of flavor to bring it all together. Watch the video to find out how to make it!

Wow, that’s the most realistic non-meatloaf I’ve seen. It was tall and the texture really looked similar. You hit it out of the park, Brian! Thanks for posting it.

That looks AMAZING! Want that glaze on some roasted potatoes, sweet potato and butternut. With some pepita dukkah that's a great autumn dish. And meatloaf sandwiches kick @ss. Wonder bread, mayo, black pepper and meatloaf is total nostalgia.

This looks so tasty, I‘m going to try it! I‘m not 100% plant-based yet, but getting there. Black beans have been a staple in my meat substitution. They work really chopped up with taco seasoning in tacos or burritos instead of ground beef.

I made this today, it came out great! I followed the recipe link and posted a comment there. I subbed soy sauce for tamari, and used more garlic. It’s absurdly hearty and flavorful, I’d make it again.

Beloved Krocks, I found you guys through Chef AJ. I have been eating a WFPB way for more than 10 years, but since the pandemic I have also been a fan of yours. Totally rooting for you. [I lost a dear, dear friend to endometrial cancer a dozen years back or so (end of 2010). Plus I had massive fibroid tumors in my uterus, necessitating a hysterectomy a few years before that. I wish I knew then what I came to know later, and I am so happy you are on a plant-strong eating path.
