Love the video and the recipe, but it would have been nice to see the inside of the lamb after it was cooked. Maybe a quick carve, just so we can see the meat from the inside.
No biggie though, excellent vid and it looks delicious!

This is a shoulder of lamb, the key is low and slow as it’ll be tough if it’s cooked too fast. 140C for 4 hours, covered is my method.
