Blackberry Orange Cupcakes with 2 Swiss Meringue Buttercreams - Blackberry and Orange

  • I have been picking the fresh blackberries in my garden and made these fruity cupcakes, which are the perfect summer treat! Topped with fresh, fruity swiss merengue buttercreams - orange and blackberry and fresh blackberries and piece of orange.
    Ingredients for 12 pcs
    1 cup (measuring ingredients) or 8 fluid ounces = 237 ml
    Ingredients:
    For the cupcakes:
    • 140 g - 4,9 oz - 1 cup all purpose flour
    • ½ tsp baking soda
    • 1 tsp baking powder
    • 1 tsp cinnamon
    • 100 g - 3,5 oz - ½ cup sour cream
    • 65 g - 2,3 oz - ¾ cup brown sugar
    • 2 eggs M size
    • ½ tsp of salt
    • 80 g - 2,8 oz - ½ cup butter unsalted
    • 140 g - 4,9 oz - ½ cup milk
    Swiss Meringue Buttercream Frosting:
    • 300 g - 10,5 oz - 3 cup butter unsalted
    • 100 - 3,5 oz - ½ cup sugar granulated
    • 120 g - 4,2 oz - 4 pcs of egg whites
    • a) 4 tbsp blackberry coulis
    • b) orange zest from 1 orange
    Blackberry Coulis:
    • 200 g - 7 oz fresh or frozen blackberries
    • 80 g - 2,8 oz sugar granulated
    Decoration:
    • orange
    • blackberries
