The visayan dinuguan is different from Ilocano, we don’t put too much vinegar and when I cook the dinuguan, it does not have a smell. I clean the intestines well by inverting it and soak it with lemon and flour to get rid of the smell and after rinsing it , boil it with sliced lemon and when it’s tender, then wash it again with flour to clean it more before cooking it. I also add some slice pork meat. 🇺🇸

You need to squirt some lemon or calamansi on the palabok prior to eating. Probably lemon since you're in the USA (calamansi is hard to find in America since they have a short shelf life).

the truth is,in the philippines,what is fried rice is just plain garlic rice.but there are some places that really has fried rice!like where i was born and grew up,in mandaluyong.we have what we call morisqueta tortada!which consist if rice,onions,longganisang macao,eggs,shrimps,pork and kinchay (chinese celery),and we use soy sauce!there's a lot of variations of fried rice now a days in the philippines,but just like what i mentioned earlier,basically fried rice in the philippines is as simple as garlic rice (sinangag sa bawang).

In Bicol, it was a trend to put toppings on the pancit bihon such as dinuguan, adobo or bistik. I used to eat it in meryenda time when I was in highschool.

They use pork portion with fat and skin. That makes the "non-innard" dinuguan taste better. They also add a small amount of brown sugar. The best Dinuguan is topped with cubes of crispy pork belly . (Boil Pork belly, slice to 1/2" squares and deep fry it to a crisp)
Pancit bihon (the one after Palabok) is perfect with a drizzle of calamansi /lemon and soy sauce to taste. The takeout should have come with those. 😋 You can actually dunk the bihon in the dinuguan dish (or vice versa) and they will taste good together. The dinuguan's sour taste would complement the bihon's relatively plain taste. And you'll have no need for calamansi/lemon. 😂
The shrimp looks like Chinese crispy salt and pepper shrimp.. it’s made so that you can eat the shell as well. Also, it’s not unusual to include eggs as an ingredient in Pancit. :). Cheers!
It's not actually palabok ( rice noodles and shrimp sauce on top) that's pancit malabon ( fresh miki noodles and sauteed with the sauce and patis... Should have included shrimp and squid)....as for the dinuguan they opted for pork belly that was fried before they saute it with onions , yes there is cane vinegar and green chili.... Note that before adding the blood, the vinegar has to come to a rolling boil or else there will be a metallic taste...
Wow!the container is fully packed.specially the dinuguan plus puto.the pansit goes preety well with crushed pork crackling and chop lechon kawali as toppings or add it as one of the main ingredients.

Weee... just salt and a pinch of tawas....and rinse well in a flowing water...adding vinegar is just ok, as long as you rinse it very well...
