In China and Japan, tornados(twisters) are literally called "Dragon Sweep Wind(竜巻/龙卷风)", since Japanese and Chinese legends say that tornados are brought by twisting dragons

Gust used to be Normal.
Actually, U-Turn is a bug type move because its Japanese name is a pun that's lost in translation. The meaning of the word "tombogaeri" is indeed "round-trip" and is used for planes. However, the word is made up as a combination of the words "tombo" (dragonfly) and "kaeri" (return). So while the word means "round-trip", the literal meaning is "return of the dragonfly".
Twister is the same. The Japanese word for tornado is "tatsumaki". However, "tatsumaki" can also work as a pun since it combines the words "tatsu" (traditional word for dragon) and "maki" (wrap). So "tatsumaki" becomes "dragon wrap".

Well, the biggest reason in my eyes as to why "Rock Climb" is Normal, is mostly because it's an activity/sport any human can do. Sure, it's got Rock in the name, but it felt like an exception to the rule.
Also, they could fix the name Dragon Ascent to "Dragon's Ascent" to make it grammatically fitting to what it really does.

It is a normal activity but it would be better for Rock Climb to either be rock type move or Fighting since A rock type pokemon could probably climb rocks faster than a normal type pokemon

Twister‘s japanese kanji name is 竜巻,which means tornado but the first character means Dragon, thus it is a dragon type move.

Twister makes a LiTTLE sense because it was believed that tornadoes and other disasterous forms of weather were caused by the appearance of Dragons, whom possessed godlike powers that rended the world around and destroyed everything in its path just by traversing.
...Or something along those lines. I kinda recall hearing something like that once.
Also Mat Block, "Tatamigaeshi", is a famous Ninjutsu technique to block projectiles by quickly flipping up a Tatami Mat, which you clearly show in your visual of a ninja flipping a mat to block shuriken. Fighting makes quite a bit of sense in that respect.

Pokemon with flame body/magma armor should burn up sticky webs, pokemon with heavy metal should crush/smash stealth rocks.
It would be cool if rock types could absorb stealth rocks and gain health, since almost no rock types have recovery.

I think Normal doubles as the "it doesn't really fit anything specific" typing.
That's the main reason Tri-Attack actually kinda makes sense as Normal, plus the fact that it was kinda-sorta made for pokemon like Porygon and Dodrio.
Lick is only ghost because of the Gastly line, that's literally it.
Another reason is that at least special normal type pokemon can do something without hyper beam

For the move Twister, its Japanese name can be translated to 竜巻(Tatsumaki) which is a tornado. It might sound like a flying type move, but the 竜 in Tatsumaki is actually meant dragon in Japanese and Chinese. Tornado in East Mythology was considered as the wind caused by the dragon.

Agility is where the user relaxes (again, something to do with the mind) to make itself more faster and lighter. AKA using Psychic powers to unlock the upper limit of speed.

Aside from the states of matter, having Palkia of the creation trio as Water makes sense. Many creation myths describe the primordial chaos of pre-existence as an endless sea of water. Until I learned the states of matter thing was the reason for their types, I was always more confused by Dialga being Steel.
The kana for U-turn includes the characters for "dragonfly" in it, and is learned by both Yanma and Yanmega by level up. The Japanese absolutely love that sort of play on words, which is probably what got it into the Bug type.
I'll just quote Bulbapedia on this: "The Japanese name of this move literally means "to paint a dragon and dot its eyes" and serves as a metaphor for the finishing touch in a piece of work that give it "the spark of life". The idiom originated from a legend where Zhang Sengyou, a Chinese painter, completes the dragons on a mural by dotting their eyes and thus literally bringing them to life; they spring out of the temple wall and fly off. The completed dragons immediately ascended to the heavens after the work was done."
Context is more important than literal meaning in the Japanese language, so I'd say that the reason it isn't Dragon-type is probably because there's more emphasis on the sense of completion leading to flight, rather than the simpler fact that it's a dragon flying.
Twister has the kana "tatsu" in it, which is one of several words for "dragon" in Japanese. Also, dragons in eastern mythology were known for their ability to control the weather.

Spike Cannon: Overall, attacks with normal body parts that don't have immediate elemental implications (like wings, or cheating by biting) tend to lean towards Normal.
Mat Flip refers to a known ninja trick of flipping up a tatami mat to block an incoming attack (although I'm not sure if that means RL shinobi, or movie shinobi...). Dark-type moves are typically about cheating, deception, dirty tricks, or outright cruelty (barely anything uses actual darkness); Mat Flip is fair, just unorthodox.
Nothing on Wide Guard.
Razor Wind is another instance of context being important. "Kamaitachi" literally translates to "sickle weasel", a mythological creature that would fly around on tiny tornadoes and cut people (for whatever reason, they made it into a move instead of a Pokemon). The Normal typing comes from the fact that it isn't the wind itself hurting you, but what's in it (not a literal wind weasel, but probably crap the wind picked up).
Don't see the issue with Sweet Scent. A lot of things that aren't flowers smell nice. And smelling good is a pretty plain idea, and Normal type includes a lot of pretty plain stuff.
As for Mega Punch... there's no skill behind it, like Fighting-type is supposed to have. It's just them hitting someone really hard. It not being Fighting makes sense.
Don't really get Feint. Feint Attack being Dark makes sense, but it I'm not seeing the reason behind Feint being Normal.
The whole set of Normal-type moves following that make sense (Comet Punch is the only one which doesn't initially appear to, but it's like Mega Punch--no skill, just flailing the arms around and trying to hit something. Sweet name, though).
Ghosts in Japanese mythology tend to lick things a lot (I know, it's weird). There's also a Filipino ghost called a dila that will lick humans to death that Haunter is based on--and as Haunter was one of the only three original Ghost-types...
Moonlight and Morning Sun as Normal make _some_ sense. Dark doesn't really have much to do with night or darkness--even Night Slash is actually named "Crossroad Killing" in Japanese. Although the light itself does come into play, Moonlight appeared to be as more a matter of the time. A number of nocturnal Pokemon have it, and I bet if a werewolf Pokemon existed he'd get it too (and unless they add more to the basic "werewolf" concept, a werewolf would probably be normal type). Well... if we didn't have the Fairy-Type, that is. He'd be a pretty cruel Fairy-type, but it, Ghost, and Psychic are pretty much the "magic" types now. There's already a move for directly drawing power from the sun--Synthesis, so I'd say that Morning Sun is more about just that--the morning, rising to meet the day, rather than just benefiting from the light. The morning just doesn't have the mystic connotations that the night does.
Yeah, that one's a bit weak of an excuse, but I really don't see much wrong with these two.

I'd like to comment on your take on Feint. To feint means to make a deceptive or distracting movement, typically during a fight. Though this typically sounds like a dark thing, it is like you mentioned with Mega Punch and Comet Punch. There is no skill needed to make somebody think you are going to dodge left when you are really going to pull back and dodge right. Feinting is a common thing when in combat, thus making it seem "Normal".

The bone moves are ground because they are the signature move of Marowak, although if Marowak was originally fire ghost type, would that have changed the bone moves types?

The normal type could as well be called the default type because, after all, it has 3 categories:
-Those that change after being used once: Sketch, transform, metronome.
-Those that normal people could do: growth, body slam, tackle.

Palkia is also part Water cause pearls are created by aquatic animals, Dialga is part Steel cause diamonds are hard to break, and Giratina being related to Platinum, maybe you could say that the white color of platinum represents ghosts...
Lord Hades: this one is a bit of a stretch, but platinum is also one of the noble/holy metals, and being called "holy" would sort of insinuate being something akin to a spirit, such as a ghost.
Hades Pretty-face Giratina is ghost type as it is a pokemon equavelent to the devil, which I would assume to be a dark type but as it is intended to be a counterpart to Arceus, Ghost type would fit more.
Giratina isn't the devil it's anti matter/ dark matter that shouldn't exist along side our matter. It exist "on another plane of existence"(like afterlife) and even if it was a pokedevil, satan is associated with stealing souls

Well, Dragon Ascent actually makes sense being a flying type. It is literally just like Fly, except for three things; It is not a HM, takes 1 turn, and different power. It is literally just Raquaza FLYING up into the AIR, and diving down and slamming into its target. No need for the dragon typing. Also, adding the word "Dragon" to it also makes sense, because the only Pokemon that can learn it is a dragon, which is saying that a dragon is ascenting into the sky. So, dragon ascent.
