Zucchini casserole is wonderful. You can use it as a vegetable or a main course. I like to add walnuts to my zucchini bread, also make it in smsller pans as I use these as gifts. It also makes a great muffin.

I served 24 hour marinated, thinly sliced London Broil, Scarpaccia, Caprese Salad, Focaccia & fresh fruit. 8 bottles of St. Michelle Chardonnay with frozen Cotton Candy grapes. 8 people ate until they could’ve burst. The Zucchini cups are such a great idea! The fritters and casserole look delicious as well. I always use Martha Stewart's zucchini spice bread recipe for zucchini bread. She puts cinnamon, ginger and cloves in hers. It's a wonderful spice bread/cake recipe. We got an initial "flush" of zucchini from our plants. But here in central Virginia we had a 2 week stretch of high 90's to almost 100° temps and no rain. That did my zucchini and squash plants in. We've replanted so hopefully I'll get to try these recipes soon. If not, there's always next year.
It's zucchini time of the year once again. I almost don't need to buy any zucchini as local friends and garden enthusiasts will often give away part of their crop. But also beautiful zucchini at the farmers market. I saute sliced zucchini, onions, and tomatoes, then melt some fresh mozzarella and parmesan cheese on top. Sprinkle some fresh basil on. But I would like to try some of these recipes, especially the Zucchini Jack and the zucchini fritters. They all look delicious. Kitty looks cute staircase lounging. The oversized zucchini is wonderful stuffed. Slice zucchini lengthways, scoop seeds as you would a cucumber, parboil zucchini halves, and fill with a precooked filling of your choice. I typically brown ground meat with diced tomatoes, mushrooms, olives, and celery. Add shredded cheese of your choice and fill the boats. Cover with foil tent and bake on a parchment lined pan at 350 until cheese melts, about 10 to 15 minutes.

Kevin, you have become my favorite online host! I’ve been cooking since age 8, when my mother took a chance and let me make my own fried eggs. I didn’t like the bottoms lacy. (That’s cooked too fast, in too high of heat.) I use low heat and turn the heat off at the end, before I flip the egg. That helps release the egg from the pan. We lived in a rural area of farms and subdivisions that had formerly been farmland before the end of WWII. We were the age of Baby Boomers. I took a baking class in 4-H, at age 10, and fell in love with baking. Next, was Home Ec class in high school. I’ve gotten to the age where I am unable to cook. So I’m relegated to watching others like yourself who bring those joys back, via UA-cam. Thank you for many hours of peaceful bliss. I think you might enjoy a great casserole called: Chicken Florentine Bake from Publix (grocery stores) Aprons recipe collection of online recipes. It uses ingredients you seem to incorporate in your meals and bites. So amazing! I’ve included the recipe for your convenience. Chicken Florentine Bake Ingredients 8 oz cream cheese 1 C. frozen creamed spinach 2 C. rotisserie chicken breast 8 oz Deli fresh mozzarella cheese, divided 1 ½ C. whole milk 1 large egg 1 (4-oz) jar diced pimiento’s 1 t. dried Italian seasoning ⅓ C. julienne-cut sun-dried tomatoes 1 C. jar - artichoke hearts 1 C. sliced mushrooms 16 oz gnocchi pasta Prep Preheat oven to 400°F. Cut cream cheese into small pieces and place in large bowl to soften. Microwave spinach on HIGH 2-3 minutes to thaw. Remove chicken breast from bones; cut into bite-size pieces. Cut mozzarella cheese into small bite-size pieces. Assembly Directions: Stir into cream cheese: spinach, milk, egg, drained pimientos, Italian seasoning, and 1 cup of the cheese. I make a zucchini stir fry with diced zucchini, tomatoes diced and diced onions. You can season with Italian herbs. It tastes great hot or cold and of course don't forget crusty bread. Two of my favorite zucchini bread recipes are chocolate zucchini bread and lemon zucchini bread. You can ice them or dust them with powdered sugar too. And I love making zucchini fritters which is the only way my husband will eat zucchini other than in a sweet bread.
