Check out videos about how to break down a turkey before cooking, that has worked really well for me. I toss the wings, but I end up cooking 2 breasts and two rear quarters. Its been great everytime I've done it. Eat one breast and freeze the other for smoked turkey breast some other time. I say this just because it's easier to fit the turkey in my electric smoker when it's broken down.

Hey brother I did this and it was awesome.. I don’t see how yours took 3 hours though. Mine was done in a little over an hour cooking at 325-350
