Seriously Sprouts

  • These are seriously good sprouts. There are many ways to cook sprouts and many internet versions offer up burnt sprouts and they call them charred. The combination of burnt and sprouts will leave bitterness when eating. Sprouts need to be cooked with the simplest of ingredients to enhance their flavour. If a sauce is going to be drizzled over a simple butter and honey glaze works extremely well.

I love Brussel sprouts, but tend to have a challenge cooking them to come out just right. I like them tender. Not burned or overcooked. I've got to try your way to cook them. They look fabulous. Thanks again chef for another very useful recipe. Can't wait to try. 😊❤

Wow. I've always loved sprouts, since I was a child. And cabbage. I'm definitely going to cook sprouts like that from now on. I've only got a small (round) air fryer, so need to get a tin to fit inside it. Perhaps a sponge tin would fit. They look delicious with the bacon.

I make sprouts in a pan on the stove and it seems to be the best way, though I havent tried in air fryer, im sure theyre good. A little oil and a little water in the pan, put in halved sprouts, cook at med high with lid on and the water steams the sprouts. Remove lid after a while and fry till scorching colouration. Done. Carrots come out great using same technique. Cook to desired doneness ideally before mush.

I absolutely love sprouts and im afraid i do like them on the squishy side, not falling apart, but really dislike going for a meal and the blooming sprouts are pinging about your plare because they'too hard to cut through lol. I dont have an air fryer but my family does a siminlar trick with green beans:- grow your own or buy a packet of thin green beans, top and tail them. Finely chop 1 or 2 sballots and a garlic clove, thinly dice up 3/4 reashers of lean smoked streaky bacon. In a pan of boiling salted water blanch green beans, about 5 mins, drain and set aside. In the same pan heat till hot then add a hearty amount of butter, when melted and bubbling add the shallots and bacon, cook on high until bacon fully cooked and there is a brown to the bottom of the pan where the butter has slighty caught, add the garlic and continue to cook on high stirring continuously. Turn off heat and add green beans to the pan. Deglaze the pan with the green beans, stiring and tossing the shallot, bacon and garlic through out the beans, add a good sprinkling of freshly ground black pepper and yum, there you go 😊

Hey Glen I wish you and yours a Happy Christmas Mate - I like sprouts in the oven - roasted the same way but they dont seem to char as much. Now nothing wrong with charring but some of the things Ive seen they are black/burnt which isn't enjoyable. The air fryer is a challenge its a smaller chamber and the air is blown around quite hot. Just check and give them a stir over if they are charring too much! Take care mate doing a very quick pudding tomorrow. Best, Rik

@@BackyardChef I’ll look forward to seeing your version of a pudding; I’m assuming it’s a Christmas pudding. My grand mother used to make them and hang them all over the house for months but she died and took all of her recipes with her (the selfish old crone never shared anything with anyone especially her grandsons). This was to be our first family Christmas without her criticism but the Mrs has COVID so it’s just us and two sons. (The boys and I seem to be immune, both their partners have had it and they didn’t and I’ve been exposed more time than I can count)
