To be fair the hatches in subnautica both in your base and vehicles have some magical space age tech that keeps water out when you open them to enter and leave so... Not all that implausible
At no point does the game ever show "magical force field tech". That does not exist with bulkheads in this game. Possible to implement? Sure. Make the player WORK for it though. Even then once players get good tech the game gets easier and easier. Which means less long term fun and enjoyment because lack of challenge/things to do. What Subnautica could do with is being a touch more like Rimworld in some ways. Except underwater.
I usually think of the vehicle one as explained with air pressure. Basically, the interior of the cabin would logically be pressurized to maintain normal air pressure when deep below the water, meaning they likely have onboard air pressure control systems. So maybe when you open the hatch, the sub uses the air pressure things to push the water out of the sub for the time the hatch is open. Of course, this would mean it would probably be impossible to enter when too deep underground, but one must also remember that this is a game where a squishy human body can withstand more water pressure than an armored exosuit specifically designed to resist pressure.
