If you process in hot water bath and your lids seal you can store them at room temperature until ready for use. If you have some that do not seal, yes store them in the refrigerator.
I once saw a chef make a clear tomato juice by blending them and then straining them through a cheesecloth. It took 48 hours though... from what I remember. **Edit** also I think he cooked it first.

I loved sliced Tomatoes with salt and Lemon juice

The lemon juice helps preserve the tomato juice! It doesn’t effect the flavor much it just gives it a little tang!

It’s an electric tomato press. They do not sell the model I have anymore but there are other options for $150-400.
