Sure you can have both the monitors mirroring each other, but you cant have 12 apps running at the same time. This video is stupid, the creator didn’t show any productivity advances or how this would be useful in any way.
M1 chip supports only two monitors, one is build in and second is external. Thats reason why you have Thunderbolt 3 port not Thunderbolt 4 port on iPad or Macbook Air M1/M2 as Thunderbolt 4 port must support at least two 4k monitors to be considered thunderbolt 4. So it is just mirrored screen and author trying to hide that fact. For me, dislike to video.

Yes, it can only output to one monitor. Those 2 are mirroring each other. "Fancy" camera work never really showed that and could definitely lead people to believe they were separate outputs and not mirrored. But they definitely are!
Yes, stage manager is M1 only feature, but not Pro feature. But, you cant use memory swap for Air with 64GB model. So use of stage manager on Air 5 with 64GB will be limited by physical memory.

But those are solved via screen capture of "virtual" display, so no license content playback when Display Link driver is active. It even consumes little bit RAM and CPU resources. There is no Display link for iPad driver, and even iPadOS does not prepared for more than one external display.
