One of My Favorite Cookout Sides!!

I love cookout season!! And whether you’re hosting or you are asked to bring a side, these are easy and delicious!
Ingredients:
• baby potatoes
• 3-4 cloves of garlic, minced
• 4-5 tbsp of Compound butter, I used Bone Marrow Butter from a recent video!
• salt
• shredded parmesan cheese
• parsley or chives for garnish
1. Start by preheating the smoker to 225°F and while that heats up, prep the potatoes by adding them to a tray along with a bunch of garlic, and the compound butter. Sprinkle with salt, and head out to the smoker.
2. Smoke until fork tender, usually about 45 minutes to an hour or so. Then we can fire up the @recteq_official SmokeStone to Med Hi heat.
3. Place each potato down onto a well greased griddle, and smash down carefully. I recommend using parchment paper to prevent sticking!
4. Sprinkle Parmesan cheese on each potato and cook for 2-3 mins, then flip, and cook for 2 more. Add more time if you prefer!
5. While still warm, brush on the melted butter we used to smoke them and top them off with parsley or chives. Serve with a sour cream based dipping sauce and enjoy!

It’s absolutely worth it in my opinion! Love not needing propane, and the ability to shut the lid to get some wood fire flavor is amazing!
