👩‍🍳 Instant Pot Pork Butt/Shoulder and Potatoes // So Easy! // WoW Recipe

This is such an easy recipe for Pork Butt or Shoulder in an Instant Pot. It has a little punch of heat and makes its' own delicious gravy.
Karen’s Instant Pot Pork and Potatoes
👩‍🍳 INGREDIENTS:
5-pound pork butt or shoulder with bone and excess fat removed (approx. weight) cut into 2 or 3 pieces
3 large sweet onions sliced
2 Tbsp McCormick Grill Mates Roasted Garlic & Herb Seasoning Mix
2 Cups of chicken broth
2 Tbsp Oil
4 to 6 potatoes cut into quarters (recommend Yukon Gold)
2-3 Tbsp of corn starch
Optional: 1 or 2 jalapenos chopped
Optional: Add additional seasoning if larger roast
🥣 RECIPE:
1. Put oil in the Instant Pot and turn on Sauté; sear the pork on all sides. Remove from pot.
2. Add chicken broth and seasoning to Instant Pot and scrape up any meat particles in the bottom of the pot.
3. Add onions and jalapenos; put pork back on top.
4. Close lid and pressure cook on high for 1 hour and 35 minutes. Note: Adjust timing depending on how much pork you have, i.e., 7 to 8 pounds, cook for 2 hours.
5. When time is up, quick release, then open pot.
6. Add potatoes on top and pressure cook for an additional 15 minutes.
7. When time is up, quick release and then remove pork and potatoes.
8. Mix 2-3 Tbsp of corn starch to equal amounts of cold water in a side cup.
9. Pour starch water into liquid in instant pot and turn back on to Sauté. Stir occasionally until thickened.
10. Serve pork and potatoes and pour gravy over top.
Optional: You can make this recipe without any vegetables. Just cook the meat for an additional 15 minutes. You could also add carrots and/or green beans during the last 15 minutes with the potatoes.
