How To Make Swedish King Oscar's Favorite Cake - Kung Oscar II tårta Recipe

  • Swedish King Oscar II favorite cake was Swedish Oscar's Torta or in Swedish Kung Oscar II tårta. In addition to the torta, several other dishes and food products were created in his name during his reign as king from Sept. 18, 1872 - Dec. 8, 1907. Nowadays the King’s favorite Swedish Cake with almond meringue layers and almond buttercream can be found in stores and bakeries around the world.
    Cake Ingredients
    • 1 cup ground almonds
    • 1 cup of sugar
    • 4 eggs
    • 5 ounces of butter
    • 4 ounces of sugar
    • 2 cups of whipping cream
    • 1/4 cup of chopped almonds
    • 1/3 cup of sugar
    Cake Directions:
    1. Separate egg whites from egg yolk.
    2. Beat the egg whites with an electric mixer until stiff.
    3. Add sugar into the bowl. Fold in the sugar.
    4. Add ground almonds. Gently fold in the ground almonds.
    5. Prepare 3 cake pans. Line the pans with parchment paper, butter, and flour. You can do 2 or 4 layers, depending on what size you want the cake to be. You just can’t bake with one cake pan and cut into layers.
    6. Spread the mixture evenly over the cake pans.
    7. Bake in the oven for 15 to 20 minutes at 340 F.
    8. Let the cake cool for 5 minutes before removing each from the parchment paper. Then let the cakes cool on a rack.
    Caramelized almonds Ingredients:
    • 3/4 cup of sugar
    • 1/4 cup of whole almonds
    Caramelized almonds Directions:
    1. Pour sugar in a heavy dry (un-greased) skillet. Keeping stirring sugar.
    3. Add almonds once the sugar is completely melted.
    4. Pour sugar-almond mixture over parchment paper.
    5. Let the sugar-almond mixture cool.
    6. Crush cooled caramelized almonds with something heavy such as with a hammer or a pestle and mortar.
    Buttercream Ingredients:
    • 2 cups of heavy cream
    • 4 egg yolks
    • 1/3 cup of sugar
    • 6 ounces of butter
    Buttercream Directions:
    1. Pour heavy cream into a pot.
    2. Turn on the stove to low heat.
    3. Add egg yolks into the pot. Do not allow to boil or the egg yolks will scramble.
    4. Add 1/3 cup of sugar. Whisk constantly until it thickens. The cream will thicken when you least expect it to. You might need to turn up the heat a bit if nothing happens.
    5. Once the cream has thickened turn off the heat.
    6. Add the butter into the cream.
    7. Remove from heat, and let it completely cool.
    8. Tip: To speed up cooling, place the pot in a container of cold water.
    Toasted Almond Ingredients
    • 1/4 cup of almonds
    Toasted Almond Directions
    1. For garnish toast the remaining 1/4 cup of almonds in a skillet. The skillet needs to be a heavy dry (un-greased) skillet.
    3. Stir often over medium heat until golden brown.
    4. Once almonds are toasted then leave almonds to cool.
    Assemble the cake:
    1. Mix crushed caramelized almonds into the buttercream.
    2. Place one of the cake layers on a cake stand or serving plate.
    3. Spread about 1/3 of buttercream over each cake layer.
    4. Place a 2nd cake layer over the butter creamed 1st layer.
    5. Then spread buttercream over 2nd cake layer.
    6. Continue adding cake layers and buttercream until the cake is completely assembled. This creates a tårta!
    7. The top layer gets the final layer of buttercream.
    8. Garnish with the toasted almond. For additional color add either mint leaves or fresh fruit in the center of the cake.
    10. Refrigerate until ready to serve.

    Well, with all that sugar and butter we can't describe this cake exactly as "something lightweight" 😅 but I do can understand Why it was King Oscar's favourite: looks amazingly delicious 😍😋😋
    As always, thanks for this amazing recipe. I find Scandinavian cuisine very interesting and - moreove - I like to experiment a lot in the kitchen 👍
