In Mexico we use Lard as our cooking oil. We do this in los altos de Jalisco thats all we used because thats what was available but was very good for us. We used onions, one garlic, corn tortillas and a chile serrano to infuse flavor in the manteca. Also avocado oil or extra virgin olive oil is better than vegetable due to their anti inflammatory benefits
I just open the can and add salsa or hot sauce to it and salt. Cook and taste till I get the flavor in it. I don't use any oil and even my Mexican friends ask for me how I make it come out so good.

Now I'm teaching my grandson how to make my family recipes. The beat goes on!

Hi Ester, you can definitely use the oil from your fried chicken. Just make sure to put the oil in a jar with a tight fitting lid so it doesn't turn rancid while you are storing it. I have mason jars of different sizes. You can get them at hardware stores among other places. I use them to store left over oil. Make sure to date and mark what's in the jar. You can keep it until it starts to smell rancid. I use it for beans, homemade or canned. If you want to dispose of it, I use any container with a lid (that I can seal) that I've thrown out. That way the oil isn't going all over your garbage can. Does that help?

Yes. It came out delicious. I live in Spain and believe me spanish food and mexican food are like night and day. So good corn tortillas are difficult to find. Some just don't have the nice aroma like the ones I used to get in California.
If the tortillas aren't too brown you can eat them as chips or tostada shells. In our case Andrew thought they were too dark to eat, so we threw them out.
I fry up 3-5 rushers of bacon (depending on how fatty they are) and add a bit of onion and garlic to soften. Add in the beans from a can and add a healthy dose of Badia Fiesta brand pinto bean seasoning. It gets pretty good reviews.
Thanks for making the videos. So are the 7 fried tortillas really just for imparting flavor to the oil ? I realize they can be used for eating , but I never thought about how the drying of corn tortillas would impart a flavor to the oil for cooking with.

Ok. I think if you use a deeper pot, just fry the stack together. I mean if we are only using the oil, then just skip doing it one by one. You’ll use more oil, but if you’re short on time , I think this would work

The recipe looks like a great dish, the only thing I would like to correct you about is one little tiny thing, it's "American Mexican food" I know that because when I went to Mexico to make this great Mexican food that we cook here in United States is when I went to the grocery store there, they had none of the ingredients that we have here. I'm still perfecting my beans flavor...But , Robin I have a question ..... okay so in your "How to make refried beans from scratch" ....you added a quarter of Corn oil after beans cook for about 2 hours..... Well ........what if instead of using Corn oil......I cook the tortillas with oil in advance and what if I use the Secret Tortilla Oil to add to the beans instead of the Corn oil ...... Would a still taste great?? or not really....anyways thanks again
I actively prefer manteca or beef fat in refried beans - reasons - authentic meaty flavor and to avoid rancid seed oils that have heavy chemical processing like soy, rapeseed, corn oils etc.

Add cumin, chili powder, pepper, dried garlic, and a lot more garlic salt, powder and onion powder and the canned taste goes away all together

I find canned refried beans a bit dry. I add about 1.5 tablespoons of cream cheese to them, and that really makes the consistency perfect for us.
