VEGAN EGGS AND VEGGIE RECIPE
1 cup soaked yellow split mung beans
1/4 cup unsweetened plant milk
1/4 cup aqua faba
1/2 tsp each salt, onion powder, garlic powder
1/4 tsp. turmeric
2 Tablespoons nutritional yeast
1 pre-cooked potato chopped
1 cup frozen peppers and onions slightly defrosted (you can use fresh)
1/2 cup cooked green beans
1/2 cup cooked broccoli
1 cup finley chopped kale
4 chopped cherry tomatoes
garlic salt
Add the first 6 ingredients into a bullet or blender and blend till smooth, set aside.
To a preheated dry pan on medium heat add the potato and season with a little garlic salt and let it cook for 3 to 4 minutes till it gets some color. Then push the potato to one side and add the pepper and onions and cook for 3 to 4 minutes and mix with the potatoes. Then add the green beans and broccoli and let cook for 3 minutes then add the kale and tomatoes and cook for 3 minutes till heated through. REmove the veggies from the pan and wipe it clean. Pre-heat on medium heat and add half the egg mixture and swirl pan to get an even layer of the egg. Cover and let cook for a few minutes until it gets a bit dry. Then break it up with a spatula and cover for another 2 to three minutes. Eggs will be sticky. then add the potato and veggie mix to the eggs and cook for another few minutes.
Makes 2 servings.
RAW FOOD ROMANCE WRAP
1 wrap of any kind. I used a recipe from Raw Food Romance

Ingredients
oil free hummus here is the link to the recipe video • Aquafaba hummus-oil free
1/4 cup or so of each of the following:
shredded carrot, shredded red cabbage, chopped red onion, chopped toamto, a few chopped pickles and olives
Spring mix or any greens, as much as you can stuff into the wrap.
Turn the wrap on the diagonal and spred a good amount of hummus over entire wrap. Starting in the middle of the wrap add your veggies. fold over from the bottom and the the sides and then roll to the other end and cut in half and enjoy
Makes 1-2 servings
RED KURI SQUASH SOUP
1 red kuri squash peeled and chopped (you can use butternut sqaush)
1 small onion chopped
1 potato chopped
1 carrot chopped
1/4 red lentils
1 tsp each, cumin, onion powder
1 to 1 1/2 tsp chopped garlic
4 cups veggie broth
2 cups water
2 cups finely chopped kale or spinach
Add everything to an instant pot or pressure cooker except set for 15 minutes on manual and let natural release for 5 minutes and then quick release. Using an immersion blender, blend till smooth (or you can add to a blender) Add the kale and stir well and let sit for 5 minutes before. serving. Add salt and pepper to tasted. Makes 6 servings.

Thanks for the recipes. For pumpkin, i usually chop in half or quarters and bake. Then it’s easy to take the peel off. Also releases a nice sweet flavour 😊
Yes, that's such a good way to do it, there's no wrestling with it if you've baked the pumpkin/squash first. I bake them whole in the oven, then cool it, remove the seeds and chop, and then peel if needed., very little effort.
I usually do that but I didn't have the time to bake it first. Or I have my husband cut it up for me.

Fabulous, thank you. I never peel my pumpkins or squashes - I either dry-roast them or boil them (for soups and stews) and the skin is always soft and edible. It saves me amputating my fingers!! 🎃 🎃
I agree, I usually do that but I was pressed for time and needed to get it in the instant pot. My husband is usually around to help me out.

Thanks for the recipes. I’ve never done anything with mung beans and so I bought some yesterday. Your recipe calls for one cup soaked. So I poured a cup of mung beans into a bowl and filled them with water. I don’t think I did it right because the beans looks like they almost tripled in size. Now I have lots and lots of soaked mung beans. I’m not sure what to do with but I guess I’ll take one cup out for the egg recipe? I’ll make that tomorrow. Still figuring things out here…
You can double or even triple the recipe. I like to cook a ton of it and have breakfast for a week. You could also use it to make a quiche. The liquid will stay good in the fridge for about a week. I haven't tried freezing it but I am sure it would be fine.

soup season! Debi, when you poured a little bit of the yellow mung bean mixture into the pan, can you estimate how much of that mixture it was? Trying to figure out how many servings one cup of soaked mung beans will make. Thanks!

As a vegan did you experience muscle loss ? How do you make sure you have your full dose of daily proteins ? I suffer a multi systemic pathology and it is hard for me to find proper food. Thanks.
I have been vegan for over 12 years and have never experienced muscle loss. If you eat a variety of greens, grains, beans, tofu and are getting enough calories you can easily get enough protein. If you are still struggling I would add in a protein smoothie. A couple of scoops of plant based protein powder is 20 grams of protein.
