When they call the cook a Pitmaster...you should know that in the US that is an ACTUAL title...earned after years of work. A pitmaster is not like a chef...a chef commands an entire kitchen, knows many different meals/recipes/ etc...but a pitmaster is a true specialist in barbeque...and is focused on perfectly seasoning and smoking (slow cooking) different types of meat. It is a profoundly respected art, and while the video does show the end product...it didn't quite get the message out that pitmasters are like rock stars of the American restaurant world.

The correct way to barbecue is to get your fire going, put the meat on, then sit around drinking beer and watching sports for nine hours while it cooks! Then invite your friends over for a feast. That's the true spirit, essence, and culture of barbecue. And absolutely add in your favorite local dishes! Barbecue is regional, if you personalize it for your local favorites, you're following the authentic spirit of barbecue tradition!
Goldee's is only open 3 days a week, from like 11am until sold out which takes 3 hours if you're lucky, that's why the guy was already sitting there at like 8am, to be first in line.

Two of their old employees have opened up their own places. One is in Lockhart, TX called Barb's. The other is in Port Neches, TX called Redbird. I've been to Redbird and it is as good or better than Goldee's. They both have profile videos on UA-cam.
Hi Recky. I have been a pit master for 40 years (amateur) and your dad is right. Tending a full sized smoker can be a pain until you get your firebox skills down. A medium sized (1/2 sq meter) consumer grade smoker is what you need to get started. If you have a lot of money, get the thickest metal. The great news is with a small smoker & some help you can get some excellent BBQ first time & within a few sessions be 90% of the way to Goldee's or Terry Black's. If you are still determined to go big, see what you can find there. Cost at Goldee's or Terry Black's will be Brisket @ $50 pound (1/2 kilo) Pork Ribs half that. Beef Ribs I haven't had in so long at a top place, I'm not sure. With sides & everything $75 for one person. A tray the size they have $300 maybe? At a top place. I always go to less than top place for $30 or just fix it myself for $20 or less. BTW, Goldee's is about 15 minutes away & smoking does preserve well for shipping.
@@Sameoldsongdance I guess I wasn't clear. It took me ten years to reach artisan level BBQ. I'm always very critical of my own so I never think it is good enough. But people have told me it is high level BBQ. Now I'm 72 & don't want too stand out in the heat anymore.
@TexasRose50 I think lately it really depends on where you go, and how internet famous the place has become. I don't know about Goldie's, but Terry Black's and Franklin's you are definitely paying a premium for the Brand.
To get a plate a "normal" person would eat at Goldees (2 meats, 2 sides and a drink) would cost about $22.50 plus tax. That is for 1/4 lb of brisket, 1 sausage link, 2 small sides and a iced tea.
One thing I wish I did right away when learning to BBQ was to write every thing I did during a cook into a journal. When you are new, you're learning to cook, but you are also learning the personality of the BBQ pit. Countless times I wished I knew what I did this time to make the meat taste better than the last time. Don't change too many things at once.
Great advice! I don't make BBQ, but I do bake, and with plenty of experimentation. I concentrate so hard on what I'm doing that I can't remember anything when I'm finished. Therefore, it's necessary for me to write everything down.
To cook BBQ, "low & slow" is the name of the game. Also, I've been following those two kids for a long time; they are just adorable and never fail to cheer me up!
Goldee's is in my neck of the woods. They made #1 in Texas Monthly's list of best BBQ places. They're pretty much a shack in a less developed part of Fort Worth. The line starts forming at the crack of dawn. They're a fairly new place that opened in 2020 or 2021. Goldee's turkey is my favorite. I get extra to make sandwiches at home. BBQ is expensive. Some cuts of meat require a lot of trimming, so there can be waste. But, mostly, you're paying for the labor of tending the pits for 10-16 hours. They probably have $200 of food on that tray. You may already know this, but BBQ comes in many regional variations. They vary in cuts of meat used, woods burned, seasonings used and types of sauce. In Texas, not surprisingly, beef rules. Pecan, post oak and mesquite woods are used for smoke. In the Carolinas, pork (whole hog or pork shoulder) and fruit woods and hickory wood are used. Generally they use a mustard and vinegar based sauce. In western Tennessee, pork ribs are a speciality. In Kansas City, they use many kinds of meat with a sweet sauce. In Kentucky, BBQ lamb is a specialty up along the Ohio River. All these styles are good. The best is whatever you like the most. :)
The Biggest Struggle for New BBQ Cookers is to STOP OPENING THE PIT TO LOOK AT THE MEAT!!! These Cooks take 4 Hours, Checking every 15 Minutes just destroy your end Product... Don't get frustrated, I am 60 and been BBQing since I was 14 and I still learn new things and ways to prepare and season the meet... Mistakes will come, but you still get to Eat your Mistakes! LOL

I agree with you Cody. This is not simple grilling over charcoal or on a gas grill. You might get close with a pellet smoker, but to get the product and end results in this video, you need a true offset smoking pit. And you need to continuously keep trying to get a quality end result. In Sweden, you might not even be able to get these cuts of meat. Not that I'm saying don't try to do it, but it is constant trial and error to get a consistent end product. Good luck Recky, I hope this one is attainable for you.
I've been to Franklins, Gollees and also Terry Blacks. Most of these type bbq places will charge by the pound. The most expensive is the beef rib because you have no choice but purchase a full rib. Everything else, if you want just a couple slices, then you only pay for their weight. The beef rib can be anywhere from $50 to $75 depending on size. But it will feed 2 people. Most sides are $6 - $8. Each. A full neal with a little bit of everything will be $100 - $150. Enough for 2 to 3 people. But there are thousands of great bbq places in every state, each one unique. Around $30 each for a good meal. H
BBQ like this is usually sold by weight. So for an average person around $30.00 to $50.00 USD. The amount they have on the tray will feed 4 to 5 people. The owner of this Goldee's is a really great guy. Is there a Pit Master out there willing to go teach Recky and Carol how to cook great Texas BBQ? If we can't get Recky and Carol to Texas soon. 30-50 is the price for a full pound of brisket with sides, but I dont know if I would consider that an average portion size. Half a pound of meat is more accurate which for brisket would be about 20-25 bucks. Other meats like pork or chicken are like half the price of brisket.

You should check out the Mr. H and Friends and Eat More Vegans channels. The H's bought a Franklin smoker from the US and they've been learning all the tips/tricks they can from several people in the states as well as watching many a show.
Something for Recky to consider... Limit the kinds of wood you use to smoke with since you have stone fruit and tree nut allergies. Post oak is the wood of choice for Goldees and Terry Black's, and I think that would be safe flr you. I would NOT try cherrywood, birch, alder, or pecan. A little hickory or mesquite in combination with the post oak would be okay. But, you've never been exposed to mesquite at all, so that might not be advisable.
You dont need an expensive side burner to make excellent bbq. Watch America's Test Kitchen do brisket on a kettle grill using the snake method.texas mostly uses Salt, pepper and Garlic. That is it that video shows you what to do now. You can go big later!!! Do it now! I ha e been doing it for 20 years. So simple.
The biggest thing about cooking is that you have to have a passion for it. If you dont you will only be middling. That dish that you fix has your name on it. Its saying this is the best I can do. Dont ever get discouraged if you fail on a dish. You learn from those mistakes. The failure makes you more diligent. It makes you focus on your craft. Just because you dont own a restaurant doesn't mean you arent a chef. A true master works not for himself, but to please others.
I've been BBQing for just shy of 30 years here in Texas. It takes awhile to master but one day it just hits you!! You turn out that perfect Brisket!!! It's really not that difficult once you figure it out. Start with simple items like chicken and before you know it it becomes second nature.

Recky and Carrol , Please understand that there is a huge difference between Grilling and Smoking. Smoking is BBQing Smoking is Low and Slow. Typically a cook is many hours. The type of smoker you get is determined by the wood you have available. The easiest smoker to cook on is a Pellet Smoker . It doesn’t have to be large. An Egg type Smoker is probably next. Off set smokers require to much attention for people new to smoking.

I've been making barbecue for around 10 years, Generally as a hobby, but i've catered a couple events with my food. It's a learning process, but it won't take you long to start producing things that taste really good. But like most things that are worth doing, you can always improve at it. There's always something you can do better, every time you cook. Also as other comments have said, if you want to make BARBECUE you need a smoker. Not a grill. If you're wanting one of the barrel style smokers, make sure it has an offset firebox.

Yes, Mr and Mrs Recky do a Texas BBQ crawl, that sounds like a great idea.😂 What you need to start off with is a offset smoker where the fire is in a separate compartment, and the smoke goes across the meat, direct fire and very high temperatures is grilling not BBQing.

We left at 6:30am on a Friday..arrived at almost 8am...took our lawn chairs and waited for 3.5 hours before we finally got inside. Our bill for 3 people was about $125. It was very good and I love their brisket, sausage and turkey, but I won't go again. There are soooo many good BBQ places all around us that's it's hard to justify that much time again. Josh and Ollie are lucky because they get to walk right in and sit down.
Goldies is my favorite local joint! Depending on what you get you are going to spend between 20 - 30 USD for a meal for one person. Maybe a bit less if you just get a sandwich. A meal for two with several sides was $80 when I went.
My dad built his own, BBQ. He cut a 50 gallon metal container in half the long way. The top became the top of the BBQ and the bottom was for the wood. The food was amazing. I made a whole turkey once. Never had a juicier meat. We had it forever.
It sounds delicious. my daddy built one using cinder blocks and we called it "the pit" and the food was off the chain. I don't think we ever owned an actual grill.
I've been practicing BBQ all of my life and I have hit and miss meals. Learning to control the heat is the best lesson I have learned. When it's good it's special, when it's not it's either feed the family something not so great or order out. Good luck in you adventures!
When I watch your videos, all I can think of is “those poor guys.” I feel so sad/bad for you not being able to buy what you need/want from the store. I’m so happy when such nice people are able to send such wonderful things to you. I enjoy watching you react to getting even the smallest of things. Like canned corn! Im bred, born, raised Texan. Just FYI, when you decide to buy a smoker you must accept that your learning to smoke properly will be from the mistakes you make early on, and you will make mistakes. Learn from your mistakes and you will master the process. Dont buy into the "Texas Crutch" where you only smoke the brisket for 7 hours. Proper brisket smoking takes 14 hours. Watch a lot of YT vids before you commit to trying it yourself. Trust me, there's nothing more enjoyable than smoked brisket and beef ribs. When you talk BBQ, Texas and Oklahoma are talking beef; while all other states are talking pork. Smoked Turkey will surprise you as long as you dont over cook it. You havent had MacNCheese until you've had smoked 5 cheeses MacNCheese. If you ever get to come to Texas for BBQ either go to Austin or D/FW. Houston has its BBQ but is more of an international city with Seafood restaurants being close to the gulf. Ive been all over the states and each state has its own culture and Ive always come back to Texas - there's something really special about Texas. When you come here, dont forget to take the time to try Southern Comfort food, Cajun food, and Tex'Mex. If you have the time, after you've had BBQ from the #1 smokers, your objective is to try hole in the wall BBQ pits that do BBQ right but at a fraction of the costs. The #1 rated BBQ'ers will eat up a $60 per person easily depending on your appetite with the hole in the wall BBQ'ers in the $30 per person. Good luck and happy BBQ'ing.
I smoked 2 racks of baby back ribs yesterday. I'm from the HUGE city of Tombstone Arizona (we had 32 seniors in my high school class) but have lived Deep In The Heart Of Texas since I got out of the Army in 1994 Texas BBQ ROCKS!!!
Recky, you can find many instructional BBQ videos but even with them be aware that it will be an extensive learning curve. Developing the little techniques that will make what you BBQ great will take time and learning. It's not likely that your first or several early attempts will be satisfactory but stick with it and you will get there. Oh, and heed the advice of @Cody38Super in the comment below, a proper smoker is absolutely necessary.
You just can't go outside and throw this on the grill. This meat is smoked and it takes a long time . The brisket is 12-14 hours. It's a labor of love.

I like to crochet and I had come up with my own pattern for a blanket. But because it was my own creation, I had nothing to fall back on when I encountered a problem as no one else was doing it. Each time I made a blanket with this pattern, I learned something new for the next blanket until I finally got it perfected to my satisfaction. It was simple trial and error. It may take you several tries to get the barbecuing to your satisfaction through simple trial and error also. I’m sure you will enjoy the process even when you make a mistake.
I don't know if you have seen Mr H and Friends. He is from UK and like you got intrigued by BBQ and Smokers. He has just bought a smoker and started making his own...you might want to check out his collab videos where he works with USA pit masters learning techniques. 🙂

American BBQ is regional, whether you are in Memphis, St. Louis, Texas or the Carolinas. The rubs and sauces are so different, Carolina Gold (mustard base), Alabama White Sauce (mayonnaise base) to name a couple. Each region is a treat in itself.
Please don't take this wrong but I was enjoying my first time watching you both react. When Carol almost started crying when she saw the cuts of BBQ meats I had to subscribe. (you were both great) Thank you for a great reaction.
This is just my calculation , but, I would think that it would be about 25 to 30 dollars each, depending on the cut of meat that you choose. It will come with your sides and all the sweet tea that you care to drink. If you want a beer that will be extra. And if you choose to tip, then that's a bit more. I think 80 would cover it nicely, plus you're probably going to have a go box for later😊
I was a little disappointed they didn’t try any sides?? And for dessert you gotta have either banana pudding or peach cobbler. Oh well, that’s just my opinion of course. We all have ours.
Howdy y'all from Fort Worth! Cowtown, USA! I live just a few miles away from Goldee's BBQ. I can attest that it is the absolute best barbecue you'll ever eat! It is the #1 BBQ restaurant in Texas according to Texas Monthly and by those who have visited, and for good reason. People have come from different parts of the world to eat here. So far...no complaints😅😅. By the way, you do not want a barrel grill. What you want is what is called an offset smoker. You can do everything on those. Also, if you noticed they did not put any sauce on the meat. They ate it just as it was served because that is always the best way. If you have to add any kind of sauce to your brisket, something's wrong. And about that sausage. The state of Texas owes a lot to the German immigrants who first immigrated to North Texas in the 1830s. They are the ones who brought their style of sausage to North Texas and we Texans later took that sausage and put a Texas twist on it to create a completely new taste profile.
It will take time for you to get what YOU think is the best, but you will have a blast practicing. You might be eating brisket casseroles, beef for break lunch and dinner, beef jerky BUT you will love perfecting it and putting g your name on it. Don't give up!
Luckily the number 2 on their list, Interstellar BBQ, is just down the road and I go there quite often. I've never been sure why people were so infatuated with Terry Black's but hey it's good to see people trying other places now.

I can only speak of my home state of Texas but we like to "smoke" our turkeys for Thanksgiving. The taste of the meat brings out all of the side dishes we have. Dang, I'm hungry now for it !!! 😋👍. Thank God I've got a great BBQ place down the road !! 💛 from Texas.....
I started my BBQ journey about 35 yrs ago and it's honestly a gradual learning experience. Southern BBQ is in a class to itself. I won't argue Southern BBQ vs. Texas BBQ. It's all delicious, but being from Tennessee, Pork BBQ is my preference over beef. The true way to learning to BBQ is to just dive in and start. You don't have to have the most expensive setup to get started. You just need some kind of enclosure to trap the smoke with a rack to put your meat on and some heat (either direct or indirect; I prefer indirect). Experiment with seasonings and spritzes and temperature control. The type of wood that you use will give different tastes to your meat, so experiment with that too. Don't be afraid of failure. You will learn from failures. Give it a go and good luck.
Every other state in the Southern US would contest they have the best BBQ, and that competition has been so good to us. The rest of us just get their pitmasters, God bless America.
Key to bbq pork is low and slow. Now I smoke until I reach 160 F internal meat temp then wrap in foil and turn it up to finish to 200 F I use a combination of hickory apple and sometimes add cherry wood to the mix. I use the same for chicken and beef.
You can make a smoker out of sheet metal. My cousin smokes our turkeys every thanksgiving using a smoker jury rigged from aluminum catering serving trays.
My local BBQ joint costs around $22 for a pound of brisket, $15 for four pork ribs, $12 for a sausage; I don't normally eat everything like Jolly does when I go for BBQ; I usually pick something different each time unless I simply have a craving.
Remember ……. It’s the wood. And you need a lot of it. That’s the criteria that only America can check off. Mesquite, oak, apple ,cherry , Pecan, and Hickory!!! Long (14 hours +) and low temperature! ……
Yes buy a smoker. What you want is an indirect heat source and smoke to cook the meat low and slow while forming a smoke ring around the outside of the meat. After 12 hours just slow roasting and smoke permeating throughout the meat and beef brisket should melt like butter in your mouth
Recky I know you are going to get TONS of advice on what to buy but if you want a smoker check out the Weber 18" Smokey Mountain Charcoal Smoker. We had one for years. They are good for beginners and they are reasonably priced. They use charcoal and you can put wood chips soaked in water. But yes a barrel smoker would be awesome too. 4.8

Goldee's is only open 3 days a week, from like 11am until sold out which takes 3 hours if you're lucky, that's why the guy was already sitting there at like 8am, to be first in line.
They opened another location but I can't remember the name. It's not Goldee's but it's run by the same guy.

Two of their old employees have opened up their own places. One is in Lockhart, TX called Barb's. The other is in Port Neches, TX called Redbird. I've been to Redbird and it is as good or better than Goldee's. They both have profile videos on UA-cam.
Hi Recky. I have been a pit master for 40 years (amateur) and your dad is right. Tending a full sized smoker can be a pain until you get your firebox skills down. A medium sized (1/2 sq meter) consumer grade smoker is what you need to get started. If you have a lot of money, get the thickest metal. The great news is with a small smoker & some help you can get some excellent BBQ first time & within a few sessions be 90% of the way to Goldee's or Terry Black's. If you are still determined to go big, see what you can find there. Cost at Goldee's or Terry Black's will be Brisket @ $50 pound (1/2 kilo) Pork Ribs half that. Beef Ribs I haven't had in so long at a top place, I'm not sure. With sides & everything $75 for one person. A tray the size they have $300 maybe? At a top place. I always go to less than top place for $30 or just fix it myself for $20 or less. BTW, Goldee's is about 15 minutes away & smoking does preserve well for shipping.
And then another decade or two to get the other 10% of the way there.

@TexasRose50 I think lately it really depends on where you go, and how internet famous the place has become. I don't know about Goldie's, but Terry Black's and Franklin's you are definitely paying a premium for the Brand.

To get a plate a "normal" person would eat at Goldees (2 meats, 2 sides and a drink) would cost about $22.50 plus tax. That is for 1/4 lb of brisket, 1 sausage link, 2 small sides and a iced tea.
One thing I wish I did right away when learning to BBQ was to write every thing I did during a cook into a journal. When you are new, you're learning to cook, but you are also learning the personality of the BBQ pit. Countless times I wished I knew what I did this time to make the meat taste better than the last time. Don't change too many things at once.
Great advice! I don't make BBQ, but I do bake, and with plenty of experimentation. I concentrate so hard on what I'm doing that I can't remember anything when I'm finished. Therefore, it's necessary for me to write everything down.
To cook BBQ, "low & slow" is the name of the game.

I agree with that. You can slow cook ribs in the oven and then caramelize them on the grill with charcoal that is made from fruitwood.
Goldee's is in my neck of the woods. They made #1 in Texas Monthly's list of best BBQ places. They're pretty much a shack in a less developed part of Fort Worth. The line starts forming at the crack of dawn. They're a fairly new place that opened in 2020 or 2021.
Goldee's turkey is my favorite. I get extra to make sandwiches at home.
BBQ is expensive. Some cuts of meat require a lot of trimming, so there can be waste. But, mostly, you're paying for the labor of tending the pits for 10-16 hours. They probably have $200 of food on that tray.
You may already know this, but BBQ comes in many regional variations. They vary in cuts of meat used, woods burned, seasonings used and types of sauce. In Texas, not surprisingly, beef rules. Pecan, post oak and mesquite woods are used for smoke. In the Carolinas, pork (whole hog or pork shoulder) and fruit woods and hickory wood are used. Generally they use a mustard and vinegar based sauce. In western Tennessee, pork ribs are a speciality. In Kansas City, they use many kinds of meat with a sweet sauce. In Kentucky, BBQ lamb is a specialty up along the Ohio River.
All these styles are good. The best is whatever you like the most. :)

Cold smoking is the way to go
I agree with you Cody. This is not simple grilling over charcoal or on a gas grill. You might get close with a pellet smoker, but to get the product and end results in this video, you need a true offset smoking pit. And you need to continuously keep trying to get a quality end result. In Sweden, you might not even be able to get these cuts of meat. Not that I'm saying don't try to do it, but it is constant trial and error to get a consistent end product. Good luck Recky, I hope this one is attainable for you.

I think the convincing part of this is the all upper case.
I've been to Franklins, Gollees and also Terry Blacks. Most of these type bbq places will charge by the pound. The most expensive is the beef rib because you have no choice but purchase a full rib. Everything else, if you want just a couple slices, then you only pay for their weight. The beef rib can be anywhere from $50 to $75 depending on size. But it will feed 2 people. Most sides are $6 - $8. Each.
A full neal with a little bit of everything will be $100 - $150. Enough for 2 to 3 people.
But there are thousands of great bbq places in every state, each one unique. Around $30 each for a good meal. H

BBQ like this is usually sold by weight. So for an average person around $30.00 to $50.00 USD. The amount they have on the tray will feed 4 to 5 people.

30-50 is the price for a full pound of brisket with sides, but I dont know if I would consider that an average portion size. Half a pound of meat is more accurate which for brisket would be about 20-25 bucks. Other meats like pork or chicken are like half the price of brisket.

You should check out the Mr. H and Friends and Eat More Vegans channels. The H's bought a Franklin smoker from the US and they've been learning all the tips/tricks they can from several people in the states as well as watching many a show.

Something for Recky to consider... Limit the kinds of wood you use to smoke with since you have stone fruit and tree nut allergies. Post oak is the wood of choice for Goldees and Terry Black's, and I think that would be safe flr you. I would NOT try cherrywood, birch, alder, or pecan. A little hickory or mesquite in combination with the post oak would be okay. But, you've never been exposed to mesquite at all, so that might not be advisable.

You dont need an expensive side burner to make excellent bbq. Watch America's Test Kitchen do brisket on a kettle grill using the snake method.texas mostly uses Salt, pepper and Garlic. That is it that video shows you what to do now. You can go big later!!! Do it now! I ha e been doing it for 20 years. So simple.
The biggest thing about cooking is that you have to have a passion for it. If you dont you will only be middling. That dish that you fix has your name on it. Its saying this is the best I can do. Dont ever get discouraged if you fail on a dish. You learn from those mistakes. The failure makes you more diligent. It makes you focus on your craft. Just because you dont own a restaurant doesn't mean you arent a chef. A true master works not for himself, but to please others.

Recky and Carrol , Please understand that there is a huge difference between Grilling and Smoking. Smoking is BBQing
Smoking is Low and Slow. Typically a cook is many hours. The type of smoker you get is determined by the wood you have available. The easiest smoker to cook on is a Pellet Smoker . It doesn’t have to be large. An Egg type Smoker is probably next.
Off set smokers require to much attention for people new to smoking.
Pellet smoker is good idea, especially if they have environmental restrictions
TastyBake has a really good unit that is great to learn on, too. Not too big, and you can really dial in the temps, too.
Recky, you should check out ' Mr. H and friends' . He's just bought a smoker from the USA and is traveling the US, South to learn how to smoke meat like goodies in texas.
I've been making barbecue for around 10 years, Generally as a hobby, but i've catered a couple events with my food. It's a learning process, but it won't take you long to start producing things that taste really good. But like most things that are worth doing, you can always improve at it. There's always something you can do better, every time you cook.
Also as other comments have said, if you want to make BARBECUE you need a smoker. Not a grill. If you're wanting one of the barrel style smokers, make sure it has an offset firebox.
100% agree, Offset firebox is the only way to go if getting that style.

What you need to start off with is a offset smoker where the fire is in a separate compartment, and the smoke goes across the meat, direct fire and very high temperatures is grilling not BBQing.

We left at 6:30am on a Friday..arrived at almost 8am...took our lawn chairs and waited for 3.5 hours before we finally got inside. Our bill for 3 people was about $125. It was very good and I love their brisket, sausage and turkey, but I won't go again. There are soooo many good BBQ places all around us that's it's hard to justify that much time again. Josh and Ollie are lucky because they get to walk right in and sit down.
Goldies is my favorite local joint! Depending on what you get you are going to spend between 20 - 30 USD for a meal for one person. Maybe a bit less if you just get a sandwich. A meal for two with several sides was $80 when I went.
My dad built his own, BBQ.
He cut a 50 gallon metal container in half the long way. The top became the top of the BBQ and the bottom was for the wood. The food was amazing. I made a whole turkey once. Never had a juicier meat.
We had it forever.
It sounds delicious. my daddy built one using cinder blocks and we called it "the pit" and the food was off the chain. I don't think we ever owned an actual grill.

When I watch your videos, all I can think of is “those poor guys.” I feel so sad/bad for you not being able to buy what you need/want from the store. I’m so happy when such nice people are able to send such wonderful things to you. I enjoy watching you react to getting even the smallest of things. Like canned corn! I just wish I could cook some homemade meals and bake some desserts for you. Anyway, one day I’m sure you Recky will become quite the pit master! Just never give up.

Im bred, born, raised Texan. Just FYI, when you decide to buy a smoker you must accept that your learning to smoke properly will be from the mistakes you make early on, and you will make mistakes. Learn from your mistakes and you will master the process. Dont buy into the "Texas Crutch" where you only smoke the brisket for 7 hours. Proper brisket smoking takes 14 hours. Watch a lot of YT vids before you commit to trying it yourself. Trust me, there's nothing more enjoyable than smoked brisket and beef ribs. When you talk BBQ, Texas and Oklahoma are talking beef; while all other states are talking pork. Smoked Turkey will surprise you as long as you dont over cook it. You havent had MacNCheese until you've had smoked 5 cheeses MacNCheese. If you ever get to come to Texas for BBQ either go to Austin or D/FW. Houston has its BBQ but is more of an international city with Seafood restaurants being close to the gulf. Ive been all over the states and each state has its own culture and Ive always come back to Texas - there's something really special about Texas. When you come here, dont forget to take the time to try Southern Comfort food, Cajun food, and Tex'Mex. If you have the time, after you've had BBQ from the #1 smokers, your objective is to try hole in the wall BBQ pits that do BBQ right but at a fraction of the costs. The #1 rated BBQ'ers will eat up a $60 per person easily depending on your appetite with the hole in the wall BBQ'ers in the $30 per person. Good luck and happy BBQ'ing.

I smoked 2 racks of baby back ribs yesterday. I'm from the HUGE city of Tombstone Arizona (we had 32 seniors in my high school class) but have lived Deep In The Heart Of Texas since I got out of the Army in 1994 Texas BBQ ROCKS!!!

Recky, you can find many instructional BBQ videos but even with them be aware that it will be an extensive learning curve. Developing the little techniques that will make what you BBQ great will take time and learning. It's not likely that your first or several early attempts will be satisfactory but stick with it and you will get there. Oh, and heed the advice of @Cody38Super in the comment below, a proper smoker is absolutely necessary.

This is a part of Americana that needs to be shared with the world. There is no better way to prepare meat than this.
I like to crochet and I had come up with my own pattern for a blanket. But because it was my own creation, I had nothing to fall back on when I encountered a problem as no one else was doing it. Each time I made a blanket with this pattern, I learned something new for the next blanket until I finally got it perfected to my satisfaction. It was simple trial and error.
It may take you several tries to get the barbecuing to your satisfaction through simple trial and error also. I’m sure you will enjoy the process even when you make a mistake.
I don't know if you have seen Mr H and Friends. He is from UK and like you got intrigued by BBQ and Smokers. He has just bought a smoker and started making his own...you might want to check out his collab videos where he works with USA pit masters learning techniques. 🙂

American BBQ is regional, whether you are in Memphis, St. Louis, Texas or the Carolinas. The rubs and sauces are so different, Carolina Gold (mustard base), Alabama White Sauce (mayonnaise base) to name a couple. Each region is a treat in itself.
Please don't take this wrong but I was enjoying my first time watching you both react. When Carol almost started crying when she saw the cuts of BBQ meats I had to subscribe. (you were both great) Thank you for a great reaction.
This is just my calculation , but, I would think that it would be about 25 to 30 dollars each, depending on the cut of meat that you choose. It will come with your sides and all the sweet tea that you care to drink. If you want a beer that will be extra. And if you choose to tip, then that's a bit more. I think 80 would cover it nicely, plus you're probably going to have a go box for later😊
I was a little disappointed they didn’t try any sides?? And for dessert you gotta have either banana pudding or peach cobbler. Oh well, that’s just my opinion of course. We all have ours.
Howdy y'all from Fort Worth! Cowtown, USA! I live just a few miles away from Goldee's BBQ. I can attest that it is the absolute best barbecue you'll ever eat! It is the #1 BBQ restaurant in Texas according to Texas Monthly and by those who have visited, and for good reason. People have come from different parts of the world to eat here. So far...no complaints😅😅. By the way, you do not want a barrel grill. What you want is what is called an offset smoker. You can do everything on those. Also, if you noticed they did not put any sauce on the meat. They ate it just as it was served because that is always the best way. If you have to add any kind of sauce to your brisket, something's wrong. And about that sausage. The state of Texas owes a lot to the German immigrants who first immigrated to North Texas in the 1830s. They are the ones who brought their style of sausage to North Texas and we Texans later took that sausage and put a Texas twist on it to create a completely new taste profile.
This is why you need to come to Texas.

It will take time for you to get what YOU think is the best, but you will have a blast practicing. You might be eating brisket casseroles, beef for break lunch and dinner, beef jerky BUT you will love perfecting it and putting g your name on it. Don't give up!

Luckily the number 2 on their list, Interstellar BBQ, is just down the road and I go there quite often. I've never been sure why people were so infatuated with Terry Black's but hey it's good to see people trying other places now.

I started my BBQ journey about 35 yrs ago and it's honestly a gradual learning experience. Southern BBQ is in a class to itself. I won't argue Southern BBQ vs. Texas BBQ. It's all delicious, but being from Tennessee, Pork BBQ is my preference over beef. The true way to learning to BBQ is to just dive in and start. You don't have to have the most expensive setup to get started. You just need some kind of enclosure to trap the smoke with a rack to put your meat on and some heat (either direct or indirect; I prefer indirect). Experiment with seasonings and spritzes and temperature control. The type of wood that you use will give different tastes to your meat, so experiment with that too. Don't be afraid of failure. You will learn from failures. Give it a go and good luck.

Every other state in the Southern US would contest they have the best BBQ, and that competition has been so good to us. The rest of us just get their pitmasters, God bless America.
Key to bbq pork is low and slow. Now I smoke until I reach 160 F internal meat temp then wrap in foil and turn it up to finish to 200 F I use a combination of hickory apple and sometimes add cherry wood to the mix. I use the same for chicken and beef.
You can make a smoker out of sheet metal. My cousin smokes our turkeys every thanksgiving using a smoker jury rigged from aluminum catering serving trays.
My local BBQ joint costs around $22 for a pound of brisket, $15 for four pork ribs, $12 for a sausage; I don't normally eat everything like Jolly does when I go for BBQ; I usually pick something different each time unless I simply have a craving.
Remember ……. It’s the wood. And you need a lot of it. That’s the criteria that only America can check off. Mesquite, oak, apple ,cherry , Pecan, and Hickory!!! Long (14 hours +) and low temperature!

Yes buy a smoker. What you want is an indirect heat source and smoke to cook the meat low and slow while forming a smoke ring around the outside of the meat. After 12 hours just slow roasting and smoke permeating throughout the meat and beef brisket should melt like butter in your mouth

Good BBQ is expensive. I spent 140$ for two of us last time I was in Texas. That is with leftovers. Good BBQ is worth it. A single Beef rib was 30$
Recky I know you are going to get TONS of advice on what to buy but if you want a smoker check out the Weber 18" Smokey Mountain Charcoal Smoker. We had one for years. They are good for beginners and they are reasonably priced. They use charcoal and you can put wood chips soaked in water. But yes a barrel smoker would be awesome too.

Love you guys!! Love JOLLY too, they are so sincere and honest if they dont like something they dont act like they do. Also on a side note... I'd just like to point out that I only live a bit over an hour outside of Kansas City... also some of the best BBQ in the world.
