I just made these! I used all-purpose flour because I didn't have white whole wheat flour, and I added a tablespoon of extra water because my batter seemed to thick (which was too much). I also omitted the fresh ginger. Nevertheless, the cookies rose well and are FILLED with ginger! Great recipe! If you are concerned about it being vegan, don't be!

I made the low carb ones and switched up the recipe a little by adding Xylatol stevia mixture and adding cardamom also adding Ghee instead of coconut oil. The cookies came out great!.. People love them and the coo thing is the outside was brown but the inside was green which is neat!..

Those Ginger Cookies look wonderful. I could almost smell them. I'm team Low Carb so thank you for including that recipe. :-) As a side note, some cases of E. Coli have been contracted from eating raw flour. If I ate wheat flour anymore I'd probably still eat the raw dough because the chances are so low but there is a risk (I'm guessing especially among the young and immune compromised individuals mostly).

Just made these. My batter was not as thick as yours, and there was no way to roll the cookies in my hands. Maybe because I used butter and not coconut oil and a real egg? Didn't really matter because these cookies are soooo delicious!!!!!

Sorry I had to withdrawl my like as keto or low carb isn't good for me--limiting carbs always leads to weight gain once you eat normally (at least for me--if it works as a long term lifestyle for you then more power to you). So since you asked... lol I live in Colombia (country) and so I don´t have access to SILPAT mats or actually the majority of US fancy dancy health products :P I try to make some breads based on flax meal, almond flour, coconut flour, etc. and it will stick to my parchment paper and sometimes just not come out. Naturally, I look to Google and channels like yours for help, because majority of Colombian people don´t eat like this, and there are almost NO answers online to what to do if your stuff goes wrong. Nobody is talking about their batters sticking, just a few off-handed ¨had to experiment to make this one work¨ footnotes... Would be great if you could give some tips about: crackers, bars, pancakes, etc. that use alternative flours. LOVE your videos, and because of you, I feel confident to try new things like the flours and such from scratch! (just started this diet change 2 weeks ago!)

TBH, I'm usually here for the Gluten free recipes, though the low carb - Keto ones are great too; as they tend to be gluten free. Although I have an artificial sweetener allergy as well so, sometimes Keto doesn't work for me. Also it seems to me most vegan recipes have way too many allergens, because of the need to replace proteins, although that isn't always the case. I do love the flax/ chia seed eggs; I usually use one of each when I bake, but I use whole chia. I didn't know there was a newsletter, I will be sure to sign up. Somehow I will make this work between the two recipes, though I think these would be better as triple ginger cookies (candied, fresh & powdered; ) but I just love ginger.

I made the low carb version last year! So delicious!😋 I will be making them again on Christmas Eve! GF recipes are a priority for me.
Oh and I think I substituted the erythritol with either coconut sugar or raw honey, or a combination of both, since I didn't have that ingredient.

Carbs provide energy. So, it's really not a healthy way to eat to completely eradicate them.
Everything in moderation.
