I just made these and so delicious! I used molasses syrup in place of the date syrup. I already had it on hand. Your tip to divide into 16 pieces before rolling into balls made it easy. I will be making these again. Thank you Chef AJ!

Two questions: why not use molasses? (Is there some benefit to date syrup over molasses?) And when you say, I turn it, do you mean flip them over halfway through? Or are you rotating the tray?
The only thing I can think of is date syrup is less processed than molasses and therefore more nutritious. When she says I turn it, she’s talking about flipping themover halfway through.
Chef AJ, do you have a link for that beautiful pink baking sheet? I looked in your Amazon favorites list and didn't see it. These cookies look amazing.
Why not try swapping out one meal at a time. Try just going WFPB for breakfast for a while, and see if you like it, and if it agrees with you. If it does, move on to swapping one or two lunches a week. If that seems okay, swap three lunches. Then do it with dinner. I find that I'm usually okay with breakfast and lunch. Dinner gives me the most troubles, only because my husband does is not all in with WFPB. So, then I still have to cook his meat and then he'll eat whatever I'm having as a side. Good luck.

Can we substitute vanilla extract for the powder?
That should be fine...you can always add a small bit more oats to counteract the additional liquid or use a tsp. less date syrup
