Great information. Thank you! I recently started making kefir smoothies - mainly because of the GI problems I was having. Added bonus: I have more energy!

Hi Donna, my son loves kefir cheese. Thanks to you. He eats it as a dip with vegetables. I have a question. Will adding salt to kefir cheese kill the probiotics in it?

Ty for the information, it sounds like it only affects the carbs(sugar) in milk and not the protein, is that right?

Is this also true when making l-reuteri or gasseri yoghurt from non fat / 2% or Whole milk? Is ther also only about 1 carb per 1 cup of yoghurt left? Or 1 carb per 240g of yogurt for the metric system?

Hi Donna, I have been following you since a month now to learn how to make probiotic food for my son who is having ulcerative colitis and also lactose intolerant. I made kefir by double fermenting. But still my son complains of tummy ache after drinking it. What wrong am I doing?

Hi, a few things to note. Kefir is an extremely powerful probiotic food. It's LOADED with good bacteria and other vitamins etc. This means that it is very powerful at assisting the body in detoxing and purging excess bad bacteria, yeasts heavy metals and so much more. Since your son has a lot to heal from he can go through what is called a healing crisis. Which has a variety of symptoms when the body is trying to heal and detox. This is a very good thing in the long run, but can be not so fun in the beginning. You can also switch to non dairy kefir (almond or coconut etc) until he starts to heal more of his gut. But just keep in mind that not all uncomfortable symptoms are bad symptoms and check out this article: www.culturedfoodlife.com/the-healing-crisis-and-cultured-foods/
