ANYWAAAAYYY in todays recipe video Jemma will be showing you how to make possibly the most indulgent cheesecake known to man: The Dulce De Leche Cheesecake! 2 layers of light and creamy cheesecake, injected with Dulce De Leche, all encased in an Oreo buttery biscuit case (that's a base but with sides too).
If you've not heard of Dulce De Leche before it is essentially sweet caramelised milk. You can buy it from the store or you can easily make it yourself, all you need is a can of condensed milk...and about 4 hours. Follow the link below for a full tutorial on this.

For the Pie Crumb
Preheat oven to 170C fan assisted (190C non fan)
60g Melted Butter
85g Plain Flour
35g Cocoa
¼ tsp Sea Salt
½ tbsp Water
20g Caster Sugar
For the Buttery Biscuit Base
275g Oreos
Pinch of Salt
75g Melted Butter
For the Cheesecake
700g Cream Cheese
¼ tsp Sea Salt

85g Icing Sugar
210g Double Cream
1 Can Condensed Milk
For the Ganache Topping
100g Dark Choc

Argentine here! Historically speaking, Dulce de Leche was made for the first time in the Río de la Plata region, although a similar variant was first made in Indonesia.
The original recipe contains whole milk, sugar, vanilla and baking soda. The taste is completely different to the one with condensed milk, you should give it a try!
Anyways, I really liked the recipe and can´t wait to try it!!

Its actually not that hard to find real dulce de leche in London! There are many companies that sell Argentine products even door to door ☺️ I recomend La Serenisima.

Well, from what I understand variants of it were made it South East Asia, which then were brought to the Spanish Colonies in the Americas. And like many other things that can be traced to the Spanish influence in the region (like alfajores and empanadas) it is hard to trace the origin to one particular country in Latin America, as they all have legends about the origin of the dishes.
But the version we have today and what the entire world now knows as Dulce de Leche, can be first traced back to colonial records in Chile.
I agree with with Agus on her recommendation to try the original recipe or the many Argentinian brands that one can get in London. Although the condensed milk one is a nice alternative when one can't buy the real product (and it does the job well when one is home-sick ❤️).
I've actually tried that recipe with different kinds of milk, namely, cow's, goat's, and buffalo (we call the beast carabao in the Philippines). The differences were just subtle. The goat's milk one was slightly sour, while the buffalo one was just a tinge grassy (I can't find the proper word. Buffalo milk itself is reminiscent of hay and grass). I don't think, though, that the differences are pronounced enough to be noticed in a complex dish like cheesecake.

Think I'm going to do a biscoff base instead of oreo but definitely going to try this.
In the U.K. you can buy dulce de leche in Sainsbury’s. The brand they sell is Mardel. Much better flavour than cooking condensed milk.
I would recommend to make your own as the taste is not comparable with the shop bought staff😉

Omg I'm still on catch up binge watching and today I did this cheesecake BEFORE I'd even seen this video!! I did digestive biscuits instead and I had no idea the caramel was called this I've done this like my mum taught me and just called it Brown condensed milk!! You guys are definitely rubbing off on me (much to my partner and sons delight!) ❤
In South Africa the "boiled" condensed milk is sold in stores and its called Caramel treat by Nestlé

For those in Australia you can buy dulce du leche in the tin in the supermarket or caramel top and fill rather than boiling condensed milk.

In Brazil you just go to the market and buy a dulce de leche (doce de leite in portuguese) already made. We love it! It's pretty common to use it as a filling in birthday cakes

Hey! Saw this comment and I used to be the same. What I do now is put a pot on the hob and turn it on to slightly heat… I don’t leave it on long… put a tea towel down and trun the pot upside down and then put the cheesecake on top for seconds and the butter in the base slightly loosens off enough for you to slide it off base. Obvs just repeat it if it’s not quite loosening. Hope this helps :-}

It takes I and a half hours to boil the condensed milk and you can boil a few tins together and store them for another time

The last time I bought condensed milk (1 month ago) it was in a heavy plastic pouch. Because of Covid our groceries don’t seem to have the shelves stocked completely and all I could find was the pouch, also it was around Christmas so maybe that was also a factor. Hopefully the stores here aren’t switching completely to the pouches

If you have an Instant Pot or pressure cooker, I heard that you can make dulce de leche in there in about 40 minutes...depending on if you open the can or leave it closed. A quick Google should bring something up for you. :) I don't think I've ever had dulce de leche, but Starbucks is using it in their Toasted White Chocolate Mocha as the 'toasted' bit of the sauce/syrup & I want to make my own, so I just investigated it & now you came out with this! It looks YUMMY. Have a great day! :)
